Chicken feet 1 kg Tamarind juice 140 gr Lemongrass 50 gr (5 stalks) Kumquat 200 gr Chili 3 pieces Ginger 1 piece Green mango 200 gr (1 piece) Shallots 3 pieces Chili sauce 3 tablespoons Sugar 3 tablespoons Fish sauce 1.5 tablespoons Lemon 1 piece Cooking oil 2 tablespoons

  • Choose chicken feet that have a natural pinkish-white color, without any green, red, or yellow spots, and feel firm to the touch.
  • Chicken feet should not be too soft or bloated with separated toes. That could indicate water-inflated chicken feet.
  • It is advisable to buy chicken feet from reputable sources with clear origin at clean food stores to ensure health.

How to prepare Mango Tamarind Chicken Feet

  • Prepare chicken feet

    To clean the chicken feet, wash them with water. Then, soak the chicken feet in diluted lemon water for about 10 – 15 minutes.

    Next, you cut off the nails and cut the chicken feet in half for easier eating, then wash them again with water and let them drain.

    Tips for cleaning chicken feet, no fishy smell:

    • To eliminate the fishy smell of chicken feet, after purchasing, you can rub them with salt, then rinse thoroughly with cold water.
    • You can soak them in water mixed with 15 grams of baking soda and 15ml of rice vinegar for about 15 – 20 minutes. This soaking will remove any remaining dirt and help the chicken feet soften faster when cooked.
    • Additionally, you should boil or stir-fry the chicken feet before cooking the soup to reduce the smell.

    Shallots peeled, thinly sliced, to reduce the pungency of the shallots, soak them in ice water for about 5 minutes. Keep 1/2 of the shallot to chop finely.

    Lemongrass washed, roots removed, take 2 stalks cut into pieces, 2 stalks sliced thinly, and 1 stalk minced.

    Ginger washed, peeled, divide the ginger into 2 parts, one part sliced, the other part minced.

    Calamondin washed, cut into thin rings. Mango washed, cut into bite-sized pieces. Chili sliced.

  • Boiled Chicken Feet

    You pour 1 liter of water into a pot, place it on the stove, and turn on the medium heat. Then you add the cleaned chicken feet into the pot of water along with chopped lemongrass, sliced ginger, and bring to a boil.

    You boil the chicken feet for about 5 – 7 minutes until they are just cooked. After that, take the chicken feet out and place them into a bowl of ice water to firm them up.

    • Putting the chicken feet in ice water after boiling will help them become firmer, crispier, and tastier.
    • If you want the chicken feet to be softer, you can increase the boiling time.

  • Making Tamarind Sauce

    You take the tamarind, squeeze it into a bowl, and soak it in 100ml of boiling water for about 10 minutes to extract all the sourness.

    Then, you place a pan on the stove over medium heat, and add 2 tablespoons of cooking oil into the pan.

    When the oil is hot, add minced lemongrass, minced ginger, and minced shallots to sauté until fragrant, then add the tamarind water and season with 3 tablespoons of chili sauce, 3 tablespoons of sugar, 1.5 tablespoons of fish sauce, and half of the chopped chili, stirring well for the sugar to dissolve quickly.

    You cook the mixture for about 5 minutes on low heat until the sauce thickens, then add thinly sliced shallots, mix well until the shallots are cooked, then turn off the heat and let it cool.

    Tip: You can adjust the seasoning to your taste.
