Ingredients for Pickled Chicken Feet with Lemongrass and Calamondin Serves 2 people

Vegetarian chicken feet 150 gr Lemongrass 2 stalks Horned chili 1 piece Calamondin 50 gr Ginger 1 piece Green onion 1/2 stalk

Vegetarian spices: sugar, seasoning powder, cooking oil, Korean chili powder, fish sauce

Tools: bowl, pan, spoon

  • Korean chili powder can be purchased at supermarkets, grocery stores, or various e-commerce sites.

  • Vegetarian chicken feet can be easily found at vegetarian food shops.
  • When choosing calamondin, select those that are green with some yellow, plump, fresh, and not bruised. Avoid green, immature calamondin as they have less juice and can make the chicken feet bitter.

How to prepare Vegetarian Calamondin Marinated Chicken Feet

  • Prepare ingredients

    Wash the vegetarian chicken feet thoroughly. Boil the chicken feet in a pot of water over medium heat for about 10 minutes, adding a few slices of ginger and some onions for aroma, and seasoning with 1 teaspoon of seasoning powder for flavor.

    Clean the lemongrass, cut it into thin diagonal slices as shown.

    Wash the calamondin, cut it in half or into thirds horizontally.

    Clean the chili and cut it into large slices.

    Tip:

    • You can keep the calamondin seeds or remove them for easier eating.
    • You can crush the lemongrass or cut it into segments depending on your preference.

    Place the pan on the stove, turn on medium heat, and stir continuously until the mixture dissolves, cooking until it thickens slightly, then turn off the heat.

    • Depending on the saltiness of the fish sauce, adjust to taste.
