How to make Vegetarian Fish Sauce

Prepare the ingredients
Wash the eggplant with salt, then cut it into bite-sized pieces and soak it in cold water to prevent it from turning black.
Cut the tofu into bite-sized pieces. Heat a little oil in the pan, add the tofu and fry until it is golden brown on all sides, then remove it.

Mix the sauce
Add 200ml of purified water to the vegetarian sauce, then stir well until the sauce dissolves.

Cook the sauce
Reuse the oil in the pan, add onions and half the amount of lemongrass to fry until golden and fragrant. When the lemongrass, onion, and chili are golden and fragrant, pour the vegetarian fish sauce in, add the tofu and eggplant, and braise for about 10 – 15 minutes, while seasoning with sugar and vegetarian seasoning, you can add MSG to taste. Finally, add the remaining lemongrass and turn off the heat. Serve on a plate or bowl, adding a few slices of chili to enhance the appeal.
