- You need to choose fresh mung beans that are not shriveled or infested, plump and shiny beans.
- It is recommended to use peeled mung beans to save cooking time. Grinding will help the mixture be smoother.
How to make boiled duck eggs, boiled chicken eggs vegetarian

Prepare mung bean filling
Place a pan on the stove, add about 2 – 3 tablespoons of cooking oil, turn on medium heat for the oil to heat up, then add the annatto seeds and stir well until the seeds release a beautiful yellow color. Strain the oil and discard the seeds.
Soak the mung beans for about 2 – 3 hours until they soften, then cook or steam them until soft. Place the beans in a large bowl, add the annatto oil that was prepared earlier, season with 1 teaspoon of sugar, 1 teaspoon of seasoning powder, a little salt, mix well, and mash the beans until they are very smooth.
Shape the mashed beans into small, even round balls (about 1 teaspoon of beans).
Tip:
- The annatto oil will give the eggs a beautiful color and add richness to the eggs.
- Depending on your preference for richness, you can adjust the amount of oil accordingly.

Cooking Egg White Gel
Add 1/2 tablespoon of Agar powder into a pot, add 300ml (enough for about 10 eggs), stir well until dissolved, then add unsweetened fresh milk.
Place the pot on the stove, turn on medium heat, and stir continuously until the mixture boils for 1 – 2 minutes, then turn off the heat and remove all the foam that rises.
Tip:
- Depending on your preference for crispy or non-crispy egg whites, you can adjust the amount of Agar powder accordingly.
- You can add the fresh milk into the pot before cooking or add it when it’s close to boiling.

Shaping Vegetarian Eggs
Wait for the Agar mixture to cool slightly, then slowly scoop it into the egg mold, add the green bean filling that has been formed, and pour more Agar mixture to completely cover the filling.
Wait for the mixture to cool and place it in the refrigerator for about 1 – 2 hours until completely set, then the dish is ready. Remove from the mold and enjoy!

Prepare the bread
Cut the loaf of bread in half.

Stir-fry the flour
Mix the rice flour and tapioca flour with 80 ml of unsweetened fresh milk and 1/2 teaspoon of salt.
Stir well until the flour mixture becomes smooth and lump-free.
Cook the flour on the stove with 1/2 teaspoon of cooking oil and stir continuously until the flour thickens.

Wrap the filling
Spread a layer of cooked rice flour on the inner surface of the bread, then place a layer of vegetarian ribs on top of the flour.
Repeat this process to create a block with 2 layers of rice flour and 2 layers of soft tofu alternating. Then wrap the bread in foil to prepare for steaming.

Steaming the meat
Place the wrapped bread in a steamer and steam for about 10 minutes, then remove the bread.

Preparing the vegetarian pork belly
Open the foil and cut the block of vegetarian pork belly. Cut the meat into 3 equal pieces.

You heat a pan on the stove and add cooking oil and shallots to sauté until fragrant. Once the shallots are golden, add the sliced vegetarian pork belly.
Next, add soy sauce and one tablespoon of sugar, along with 1/2 teaspoon of seasoning powder to cook together with the meat.
Once the soy sauce boils again, add 100 ml of coconut water and cook together. Finally, add the eggplants and season to taste, cooking until the sauce thickens, then turn off the heat.
