How to make Fresh Milk Flan

Make caramel
First, put 120g of sugar and 100ml of water into a pot and boil (without stirring) on the lowest heat.
When you see the syrup turning a light yellow color, add 1 tablespoon of lemon juice. Continue to cook until the sugar turns a brown color, then turn off the heat.
Next, add 70ml of filtered water to the pot, and shake it gently in a circular motion to combine the mixture.
Finally, pour 1 tablespoon of the caramel you just made into each flan mold and place it in the refrigerator to set.

Mix the egg and milk mixture
In a bowl, add 6 egg yolks, 4 whole eggs (both yolks and whites), and 50g of sugar, then gently stir in one direction, avoiding creating too many bubbles.
Next, heat 500ml of unsweetened fresh milk until it starts to steam (do not boil it). Then, gradually pour the milk into the egg bowl, stirring as you pour to combine.
Finally, strain the egg and milk mixture through a sieve to remove any lumps and make it smoother.

Pouring the cake batter
Slowly pour the egg milk mixture into the caramel mold, remember to tilt the mold and pour gently to avoid creating air bubbles; otherwise, the cake will be pockmarked after steaming.

Steaming the cake
Next, place the cake in the steamer, put the steamer over a pot of boiling water. Cover the pot and steam the cake over medium-low heat for about 20 minutes.
Tip:
- To check if the cake is cooked, use a toothpick to pierce the cake; if you pull it out and the toothpick is clean without any sticky residue, it is done.
- To prevent the cake from being pockmarked, you should steam it over low heat so that the cake cooks slowly. If you turn the heat up high, the egg mixture will boil, causing the cake to become pockmarked.

Tips for Making Flan Without Holes
- When steaming, you can use a good damp cloth to cover the flan molds and then close the lid, or wrap each flan mold with aluminum foil before steaming. Every 10 – 15 minutes, you should open the lid and wipe off the condensation on the pot lid. This way, the flan will not have holes on its surface.
- For cases where the flan has holes inside, you can solve this by using a steamer and steaming over very low heat. If you don’t have a steamer and have to place the flan mold directly in the pot, it’s best to place a cloth underneath and wrap the mold with aluminum foil to minimize the boiling of the milk-egg mixture, which can cause holes at the bottom and inside the flan.
