How to choose fresh ingredients
How to choose good pork ribs and bones
- Choose pork ribs and bones that have a light pink color, bounce back when pressed, and do not have a sour smell.
- For pork ribs, you should choose ribs with small and flat bones. This type of rib has more meat and less bone compared to large, round ribs.
- For pork leg bones, you should select bones of medium size, with the marrow inside not being dark.
- Do not choose ribs and bones that have a foul smell, pale green meat, are slimy, and lack elasticity when pressed with your hand.
How to choose good dried wood ear mushrooms
- You should prioritize choosing mushrooms with large, thick ears and a stem with few offshoots.
- Good mushrooms have a dark amber color, the top side is slightly shiny, and the underside has a coffee milk color.
- Avoid choosing wood ear mushrooms that look too black, as this type may become mushy when soaked in water and is less crunchy.

How to make Rice Flour Pork Rib Porridge
-
Prepare the pork ribs
Buy the ribs and cut them into bite-sized pieces.
Dissolve a little salt in warm water and soak the pork ribs for about 3 – 5 minutes. Then blanch them in boiling water for 5 minutes, rinse thoroughly, and drain.
How to clean pork meat, eliminating odors
- You can use white wine, ginger, salt, lemon, or vinegar, then rub it on the meat and let it sit for about 5 – 10 minutes before rinsing with water.
- Additionally, while marinating the meat, roast a shallot, peel it, crush it, and marinate it with the meat to effectively eliminate odors.

Prepare other ingredients
Shallots bought should be chopped finely. Green onions and coriander should be washed clean and then chopped small.
Soak the dried mushrooms in a bowl of water for 1 – 2 hours to expand, then take them out and rinse several times with cold water until clean, then let them drain, and cut into small pieces.
Correct way to soak dried mushrooms
- You should only soak dried mushrooms for a maximum of 3 – 4 hours before cooking. Avoid soaking dried mushrooms for too long or overnight as it can lead to the production of harmful toxins in the mushrooms, which is detrimental to health.
- Soak mushrooms in cold water, not warm water, because while mushrooms expand faster in cold water, the morpholine in the mushrooms does not have much time to neutralize.

Simmer the ribs
Put a pot on the stove and add the ribs and pork bones, seasoning with 1 teaspoon of seasoning powder and 1 teaspoon of salt.
Add about 1 liter of water to the pot, turn the heat to high, wait for the water to boil, then cover the pot and reduce the heat, simmer the pork ribs for 30 minutes, then turn off the heat and let it cool.
Tip: You should skim the foam while simmering the ribs to keep the broth clear and tastier, but don’t skim too often to retain the sweetness of the broth.
-
Sauté minced meat and wood ear mushrooms
Marinate the minced pork with chopped shallots, 1/2 teaspoon of seasoning powder, and 1/3 teaspoon of pepper, allowing the meat to absorb the spices for 30 minutes.
Put a pan on the stove and add 1 tablespoon of cooking oil, then add the marinated meat and sauté evenly for 2 – 3 minutes before adding the wood ear mushrooms for about another minute.
-
Cook porridge
Take out half of the broth from the pot, then add 200g of rice flour and stir well, adjust the heat to low and continuously stir the porridge until it thickens and bubbles, then season to taste and turn off the heat.
Tip:
- You should let the broth cool before adding the rice flour to prevent clumping.
- During the cooking process, you should frequently stir the porridge to avoid burning at the bottom of the pot.
- You can adjust the amount of broth in the pot according to the desired thickness of the porridge.
Scoop the porridge into a bowl, add the stir-fried meat and mushrooms, sprinkle with chopped green onions and a little pepper to finish.
