How to Choose Fresh and Delicious Ingredients
How to choose good pumpkin
- To choose fresh and delicious pumpkin, first, you should observe the outer color of the pumpkin. The skin of the pumpkin should have a mix of green and orange-yellow, without bruises.
- Next, gently press the pumpkin with your hand; it should feel firm, and the stem should be fresh green and slightly flexible.
- Avoid choosing pumpkins with bruised or damaged skin or those with very dry stems, as these pumpkins have been stored for a long time, resulting in less sweetness and more fiber.

How to choose good mung beans
- You should choose fresh mung beans, plump and shiny beans, with a light natural fragrance when smelled, and there should be no powdery residue when held in hand.
- Avoid selecting beans with unusual colors, signs of mold or pests, or any strange odor when smelled.
- If you cannot find shelled mung beans, you can buy whole mung beans, soak them for 2 – 3 hours before cooking, and then rinse off the husk.
