Duck breast 400 gr Shredded purple cabbage 50 gr Shredded white cabbage 50 gr Shredded carrot 50 gr Chili peppers 2 pieces Chopped chili 1 tablespoon Small ginger 1 piece Fried onions/ roasted peanuts a little Tamarind juice 5 tablespoons Vinegar 1 tablespoon Soy sauce 2 teaspoons (soy sauce) Fish sauce 2 tablespoons Brown sugar 4 tablespoons Common seasoning a little (salt/ seasoning powder/ ground pepper) Cooking oil 1 tablespoon

How to choose fresh and delicious duck

For live ducks

  • Choose ducks with shiny feathers, and check the inside to see no down feathers left, with long, full outer feathers. Do not choose ducks with messy feathers, foul odor, or those that appear lethargic, as they may be sick.
  • When you grasp the duck’s breast, it should feel round and plump; thick skin on the neck and belly indicates a good duck.
  • If the duck’s wings can cross over each other, it is mature, easy to pluck, and has more meat.

For pre-prepared ducks

  • Choose ducks that have a uniform light yellow color and feel fresh. Avoid ducks that are too dark or have bruises and mottled skin.
  • If the duck feels firm and has elasticity when pressed, it is good; do not choose those that feel soft and mushy, have a foul odor, or are watery, as these are old and not fresh.

How to make Duck Salad with Tamarind Sauce

  • Prepare the duck

    To remove the odor and clean the duck breast, place the duck breast on a plate or bowl with 1 tablespoon of minced ginger, 1 teaspoon of salt, and 1 tablespoon of vinegar.

    Use your hands to massage it for about 10 minutes, then rinse thoroughly with water.

    • Method 1: Use salt, white wine, and crushed ginger to rub evenly over the duck for a few minutes, then rinse with water.
    • Method 2: Rub salt evenly over the duck, then use a halved lemon to rub over the duck again and rinse with water.

  • Marinate and fry the duck

    Place the duck on a plate and marinate with 1 teaspoon of seasoning, 1 teaspoon of ground pepper, 1 tablespoon of fish sauce, and 2 teaspoons of soy sauce, then massage well to allow the mixture to penetrate the meat and marinate for about 15 – 20 minutes.

    Heat a pan on the stove, add 1 tablespoon of cooking oil with 3 slices of ginger, then add the marinated duck meat and sear until golden brown on both sides, about 5 minutes per side.

    Finally, place the duck breast in the oven and bake at 200 degrees Celsius for about 15 – 20 minutes.

  • Make the dressing

    Place another pan on the stove, add 5 tablespoons of tamarind juice, 4 tablespoons of brown sugar, 1 tablespoon of minced chili, 1/2 teaspoon of ground pepper, 1 tablespoon of fish sauce, then bring the mixture to a boil and dissolve. Adjust the seasoning to taste and then turn off the heat.

  • Mix the salad

    In a bowl, add 50g of shredded white cabbage, 50g of shredded purple cabbage, 50g of shredded carrot, and 2 shredded chili peppers. Drizzle a little of the dressing made in step 3 and use a spoon to mix well so that the mixture absorbs the flavors. Then, arrange the mixed vegetables evenly on a plate.

    For the roasted duck, cut it into bite-sized pieces and place it on top of the mixed vegetables, then drizzle more dressing over the meat to finish.
