Use your hands to pull the head of the shrimp away from the body, then rinse the shrimp with water and place it on paper to let it absorb all the water.
Use your hands to peel the shrimp shell from the legs up, and use a knife to make a light cut along the back of the shrimp to expose the shrimp vein, then carefully pull the vein out.

- Count backwards from the shrimp tail to the second groove connecting the two segments of the shrimp shell, pierce this spot with a toothpick and gently pull the black vein to remove it from the shrimp.
