How to choose good quality dried beef

  • Good quality dried beef will have bright colors and a characteristic aroma or a slight fishy scent of dried fish. When buying, you should choose dried fish that still have fins intact and skin tightly adhered to the meat.
  • Additionally, you should check if the body of the fish has thick meat; good pieces of dried beef will be thick with a gray-white skin covering the inside.
  • Moreover, you can hold the dried fish towards the light. If it’s good dried fish, the meat will have a translucent yellow color, easily visible from the inside. Conversely, if the dried fish has been marinated for a long time, the inside of the fish meat will not be visible.

How to prepare Grilled Dried Beef Fish

  • Grilling dried beef fish

    Wash the purchased striped fish thoroughly with water to remove any dust sticking to the fish’s surface. Then let the fish drain.

    Next, place the dried beef fish on a grill, clamp it shut, and set it on the stove to grill, using low heat while continuously flipping the fish to prevent burning.

    When the fish turns a light golden color and emits a fragrant smell, it means the fish is cooked; you can turn off the stove and take the fish out.

    Tip:
    • If you have a oven, you can place the fish in the oven for 15 minutes at 170 degrees Celsius in the middle rack with both top and bottom heat settings.
    • If you do not have an oven, you can grill it over charcoal. When grilling, remember to reduce the amount of charcoal and grill the fish evenly on both sides. Remember to flip the fish to avoid burning.

    After grilling the fish, place it on a sheet of paper and use a meat mallet to pound the fish about 6 – 7 times. This helps to soften the fish meat and shred it.
