  • You should choose pig trotters with bright pink meat, no unpleasant smell, and when pressing down on the meat, it should be firm and elastic.
  • It is advisable to buy a solid piece of meat with dry cuts, and the hooves should be intact without any loosening for the trotters to be fresh.
  • If you are buying pig trotters to cook porridge, you should choose the hind legs as they have more lean meat and delicious fat that is rich in nutrients.

How to choose good, firm black beans

  • You should buy black beans that have a characteristic aroma, without any strange smell.
  • When holding the beans in your hand, they should be of uniform size, with no shriveled beans, and not pale in color. When squeezed, they should feel firm inside.
  • Avoid buying black beans that have a thin white powdery coating on the outside, showing signs of dampness or pest infestation.

How to prepare Pork leg black bean porridge

  • Prepare the ingredients

    When buying pork leg, ask the seller to cut it into bite-sized pieces about 2 finger joints thick, then bring it home and wash it with diluted salt water, using a knife to scrape off any remaining hair and then wash it clean with water.

    Put the pork leg into a pot of boiling water for about 4 minutes, then take it out and rinse it clean with cold water, then let it drain.

    Effective ways to eliminate the odor of pork leg

    Method 1: Before cooking, blanch the pork leg in boiling water for about 2 – 3 minutes, then take it out and rinse it clean with cold water. This helps the pork leg retain its beautiful color and removes the unpleasant smell.

    Method 2: You can use alcohol, vinegar, or lemon juice to rub on the pork leg to eliminate the unpleasant odor.

    Method 3: After purchasing the pork leg, scrape off the hair and then use coarse salt to rub and scrub it, then wash it clean with water.

    Black beans and rice should be washed clean, then soaked in water for about 20 minutes, after that rinse them clean and let them drain.

    Shallots peel off the outer skin, wash them clean, then chop them finely.

  • Cooking Black Bean Pork Bone Porridge

    Put a large pot on the stove, and turn on medium heat. Add 1 tablespoon of cooking oil, then add the chopped shallots and pork bone, stir until the shallots are fragrant, then add the rice and black beans, stirring for about 2 minutes. Next, add about 1 liter of water to the pot, cover it, and cook on medium heat.

    Once the porridge starts to boil, open the lid and skim off the foam to keep the porridge clear. Season the porridge with 1/2 tablespoon of salt and 2 teaspoons of seasoning powder.

    Reduce the heat and continue to simmer the porridge for about 25 – 30 minutes until the rice is fully cooked. Every 5 – 10 minutes, use a ladle to stir well to prevent the porridge from sticking to the bottom of the pot and burning. Finally, taste and adjust the seasoning to your liking, and add finely chopped green onions on top before turning off the heat.

    Scoop the porridge into a bowl, sprinkle a little chili powder and ground pepper for aroma, and your porridge is ready.
