- Avoid choosing oysters that can be easily separated from their shells by hand or shucked oysters that are dry; these are either dead or have been stored for a long time.

Chop off the roots of the green onions and coriander, wash them thoroughly and let them drain. The green onion tops should be placed in a mortar with a little ground pepper and crushed finely. The green onion leaves and coriander should be chopped small.

Cook white porridge
Wash the rice clean, put it in a pot, place it on the stove, and add 1.5 liters of water to cook it into porridge over medium heat. Cook until the porridge is done and the rice grains have expanded. Stir the porridge once with a ladle every 5 minutes to prevent it from burning at the bottom of the pot.
