How to make Banana Crepe with Butter Nutella Ice Cream
-
Mix the batter
Prepare a large mixing bowl, then add 300g of flour and 2 tablespoons of powdered sugar into the bowl, mix well.
Tip: You should sift the flour through a strainer to remove impurities and help the batter be smooth, without clumps.
-
Beat the eggs
Add 6 eggs to the bowl of flour. Use the egg beater to beat the eggs and mix them well with the flour mixture.
Then, gradually pour in 900ml of fresh milk. While pouring, turn on the egg beater, stir until the mixture is smooth, silky, and has tiny bubbles like soap, then turn off the machine.
-
Making the crepe wrapper
Heat the pan over medium heat, spread a little butter on the pan, when the pan is hot, reduce to low heat and pour a little batter into the pan.
Hold the pan and tilt it to spread the batter evenly in a circular shape, when the bottom side of the batter dries, flip it and fry until both sides are cooked evenly.
Do the same until all the batter is used up and arrange the wrappers on a plate.
-
Dissolving chocolate and nutella
Chop the chocolate into small pieces and put it in a bowl.
Next, heat 150ml of heavy cream until it is slightly warm, then turn off the heat. Pour the heavy cream into the bowl with the chocolate, using a spatula to mix until the chocolate melts.
Tip: If the chocolate hasn’t fully melted, you can put it in the microwave for about 5 – 10 seconds and then mix it again.
For the nutella, put about 50g of nutella in a bowl, pour in about 50ml of double cream, and stir well until the nutella melts and the mixture is well combined. Then add the remaining 150ml of double cream, and use a hand mixer to mix until the nutella mixture is light and fluffy.
Note: If you don’t have double cream, you can substitute it with whipping cream.
-
Making banana ice cream
Put 1 banana into a crusher or blender, blend for about 15 seconds until the banana is smooth.
Next, put 300g of heavy cream into a bowl, then add the blended banana, using a flat whisk to mix in a circular motion from bottom to top until the banana cream mixture is well combined.
Tip: With the banana cream mixture, you can add about 100ml of whipping cream to make the banana ice cream thicker and tastier.
-
Spread cream and cut the cake
Use a round mold with a diameter of 15cm to cut the outer edge of the cake.
You will shape the crepe cake layer by layer as follows:
Place a piece of cake on a plate, then scoop a sufficient amount of banana cream onto the center of the cake, using a knife to spread the cream evenly across the surface of the cake.
Next, place another piece of cake on top, then add a little nutella mixture on top, spreading it evenly across the surface of the cake and placing another piece of cake on top.
Continue alternating layers of cake with banana cream and layers of cake with nutella until you run out of cake.
Once you have completed the cake layers, place it in the refrigerator for about 30 minutes to allow the layers to set together.
Note: Remember to save about 15g of banana cream for decorating the top of the cake.
-
Decoration
You take the cake out of the refrigerator, spread 1/3 of the chocolate mixture evenly over the entire cake, and then place it in the freezer for about 10 minutes to form a base layer.
Once the chocolate has set, spread the remaining chocolate evenly over the cake.
To finish the crepe cake, you chop the hazelnuts and sprinkle them on the bottom of the cake, remembering to save a little to sprinkle on top as well.
Next, you add banana cream on top, spread it out evenly, then add a little nutella on top, sprinkle more hazelnuts along with broken chocolate and a few banana slices on top, and you can enjoy the cake.
-
Finished Product
The multi-layer crepe cake is soft and smooth, with rich nutella cream blending with sweet and nutty banana cream. Especially the slightly bitter chocolate layer on the outside adds a bit of crunch from the hazelnuts. This cake will surely win your heart from the very first try.
