Prepare the mackerel and ingredients
To clean and eliminate the fishy smell of the mackerel, cut off the fins and entrails, scrape off the scales, then soak the fish in diluted white wine for about 5 minutes. Remove the fish and rinse it 2 – 3 times with clean water, then let it drain.
Spring onions and coriander should be cleaned of any damaged leaves, roots removed, washed, and then chopped finely. Peel the garlic, remove the stems from the chili, and mince the garlic and chili.

Mix the garlic chili fish sauce
In a bowl, add 2 tablespoons of fish sauce, 2 tablespoons of water, 2 tablespoons of sugar, minced garlic and chili, and 1 teaspoon of monosodium glutamate, then stir until the mixture is dissolved.

Fried Mackerel
Add 6 tablespoons of cooking oil into the pan, heat the oil. Then, add the fish and fry on medium heat for about 10 – 15 minutes until the fish is golden brown on both sides.
