How to prepare Braised Tofu with Shiitake Mushrooms

  • Prepare the ingredients

    Wash the tofu with water, then cut it into bite-sized cubes.

    Soak the dried shiitake mushrooms in water for about 10 minutes, then rinse thoroughly with clean water 3 to 4 times. After rinsing, cut the mushrooms in half or leave them whole depending on their size.

  • Make the sauce

    Mix into a bowl the seasoning mixture consisting of: 2 teaspoons of vegetarian fish sauce, 1 tablespoon of soy sauce, 2 teaspoons of sugar, 2 teaspoons of chili sauce, 1 teaspoon of monosodium glutamate along with 1 bowl of filtered water (rice bowl), stir well until the seasoning is completely dissolved.

  • Cook the tofu

    Put a pot on the stove, heat 1 tablespoon of cooking oil over high heat, when the oil is hot, add the bowl of sauce you just made into the pot, stir well until it boils.

    Next, add each piece of tofu that has been cut along with shiitake mushrooms into the pot. Then add 2 bowls of filtered water (rice bowl) into the pot so that the water covers the mixture about 1 finger width.

    Keep the heat high for 5 minutes and after 5 minutes, lower the heat and simmer until the water is nearly reduced, then sprinkle a little ground pepper on top, adjust the seasoning to taste, and turn off the stove.
