  • Mix the dough

    You need to add flour into a bowl, then add 1/4 teaspoon of salt, yeast, and mix the mixture well.

  • Knead the dough

    Continue to add unsalted butter and fresh milk and knead until the dough is soft and smooth.

    Place the kneaded dough into a large bowl and let it rise for 30 – 40 minutes.

    The flour has been fermented and risen, you knead the dough to remove excess air and divide it into equal parts.

    Continue shaping each piece of dough by rolling it into a long cylindrical shape. Note that you should roll it so that one end of the cylinder is thick and the other end is thin, as shown in the image below.

  • Shaping the bread and second proofing

    You use a knife to cut the thick end of the rolled-out dough in half. Fold the two cut ends to the sides and slowly roll the entire piece of dough to shape the crab bread.

  • Baking bread using an air fryer

    You place parchment paper at the bottom of the air fryer and arrange the proofed crab bread inside.

    Crack the egg into a bowl, beat it well, then use a brush to evenly coat the surface of the crab bread with the egg so that after baking, the bread has an appealing color.

    You continue to bake the bread using the air fryer for 15 minutes at a temperature of 115 degrees Celsius.

Wheat flour 260 gr Butter 30 gr Egg 1 piece Yeast 4 gr Coconut milk 120 ml Sugar 30 gr Filling of choice a little (cheese/chocolate/…) Cooking oil a little Salt 1/2 teaspoon

How to make Coconut Milk Crab Bread

  • Mix dry ingredients

    First, put all the dry ingredients into a bowl, including 260g of flour, 4g of yeast, 30g of sugar, 1/2 teaspoon of salt, and mix well.

    Then, add 120ml of coconut milk and 1 egg to the bowl of flour, mixing until the ingredients form a mass and there is no dry flour left.

    Next, place the dough on the table, add 30g of butter, and knead by hand for about 15 – 20 minutes until the butter is evenly incorporated into the dough. Note to knead until the dough is smooth and no longer sticky to the hands.

  • Proof the dough

    Place the kneaded dough into a bowl greased with oil. Then cover the bowl tightly with plastic wrap and let it proof for 60 minutes until the dough doubles in size.

  • Shaping the crab bread

    After letting the dough rise, take it out and gently knead to remove air bubbles, then roll it out into a rectangular shape.

    Next, divide the dough into triangular shapes and roll each piece thinly to about half a finger’s thickness.

    Then, cut a small slit at the bottom of the triangle, add your desired filling on top (cheese, fruit jam, chocolate,…) and use your hands to roll it up until all the dough is used.

    After shaping the bread, let the dough rest for another 40 minutes. Finally, bake the bread in an air fryer at 170 degrees Celsius for 20 minutes to complete.

    The bread is evenly baked, fragrant with an attractive golden-brown exterior. The bread is soft, fluffy, moderately sweet, and rich in the taste of butter and coconut milk, making it very appealing.

Successful Execution Tips

  • You can knead the dough using a machine to reduce kneading time.
  • During fermentation, depending on whether the room temperature is cold or hot, the fermentation time may vary, faster or longer; you can tell it’s ready when the dough has doubled in size.
  • Do not substitute yeast with baking powder or baking soda.
  • Do not add salt directly to the yeast as it will kill the yeast.
  • You can store the bread for 2 days in the refrigerator and 7 days in the freezer; just reheat it when you want to eat.
