  • You should choose chicken feet that have a natural pinkish-white color, with no signs of green, red, or yellow spots, and feel firm to the touch.
  • It is advisable to buy chicken feet from reputable sources with clear origins at clean food stores to ensure health.
  • You should not buy chicken feet that are too soft or swollen with separated toes, as this may be a sign that the chicken feet have been injected with water.

How to prepare Soy Sauce Chicken Feet

  • Prepare the chicken feet

    To clean the chicken feet and remove any fishy smell, wash the chicken feet with water. Then soak the chicken feet in 2 tablespoons of diluted lemon juice for about 10 – 15 minutes.

    Use scissors to cut off the nails and cut the chicken feet in half for easier eating, then wash them again with water.

    Tips for cleaning chicken feet thoroughly, without odor:

    • To eliminate the fishy smell of chicken feet, after buying them, you can rub them with salt and then rinse thoroughly with cold water.
    • You can soak them in water mixed with 15 grams of baking soda and 15ml of rice vinegar for about 15 – 20 minutes. This soaking will remove any remaining dirt and help the chicken feet soften faster when cooked.
    • Additionally, you should boil or stir-fry the chicken feet before cooking the soup to reduce the odor.

  • Boil the chicken feet

    Boil a pot of water, add 3 stalks of smashed lemongrass and 1 halved onion along with 1/2 tablespoon of seasoning powder, and bring the water to a boil.

    Add the chicken feet into the pot and boil for about 7 minutes until the chicken feet are cooked.

    Prepare a bowl of ice water, remove the boiled chicken feet and soak them in the ice water for about 5 minutes to make them crispy and delicious, then drain the chicken feet.

    Tip:

    • Placing the chicken feet in cold ice water after boiling will help them tighten up, becoming crispier and tastier.
    • If you prefer softer chicken feet, you can increase the boiling time.

    Add 200ml of soy sauce, 100ml of warm water, and 45g of sugar into a bowl, then stir the mixture until dissolved.

    Continue adding 2 sliced chili peppers, 3 smashed garlic cloves, 2 chopped lemongrass stalks, and 1 teaspoon of whole peppercorns, and mix well.

    Place the chicken feet into the prepared sauce, mix well to ensure the chicken feet absorb the seasoning, and let them soak for about 5 – 6 hours.
