Prepare the Ingredients
For the shallots and garlic, after purchasing, peel, wash, and slice them.
For the spring onions, remove the old leaves and roots, wash them clean, then chop them finely.
Peel or wash the ginger, then cut it into thin strips.
Wash the chili and chop it finely.

Stir-frying pork fat
After buying, wash the pork fat several times with water, drain, and cut into square pieces about 3 cm.
Place a pan on the stove, add the pork fat, and stir-fry on high heat to render all the fat. After about 5 minutes, when the pork cracklings are dry and turn golden, turn off the heat, remove the cracklings, and pour the rendered fat into a bowl for later use.

Frying snakehead fish sauce
Reuse the pan used to render the fat, place the pan on the stove, and add 3 tablespoons of rendered fat to heat.
Then add the prepared shallots, garlic, and ginger to sauté until fragrant.
Next, add 1 snakehead fish to fry over medium heat, after 5 minutes, flip the fish.
After briefly frying the fish, add 100ml of fresh coconut water, 2 tablespoons of sugar, and cook over medium heat for about 5 minutes until the coconut water boils, then reduce the heat until the sauce thickens.
