Ingredients for White Tapioca Pearls For 2 people

White sugar 250 gr (can be adjusted to taste) Soft jelly powder 4 teaspoons (jelly powder) Hard jelly powder 1 teaspoon (agar powder) Filtered water 1 liter

Distinguishing between soft jelly powder and hard jelly powder

  • Hard jelly powder will create a slight firmness and solidity for the product. Meanwhile, soft jelly powder will provide a softer and more flexible texture compared to hard jelly powder.
  • Soft jelly powder is usually used to cook with various fruit juices to create a beautiful translucent white. Hard jelly powder is often mixed with coffee, pandan leaves, or chocolate to add another color to the product.

How to make White Tapioca Pearls

  • Boil the jelly mixture

    Heat 1 liter of simmering water (note not to boil vigorously), then add 1 teaspoon of agar powder and stir well. Next, mix the sugar with 4 teaspoons of soft agar powder.

    Add the sugar and soft agar mixture to the pot and stir until dissolved. Then, simmer until the mixture thickens slightly.

  • Forming the pearls

    Then pour the jelly mixture into a clean bottle with a pointed tip (like a pho sauce bottle that can withstand heat).

    Tip: In case you do not have a heat-resistant bottle, let the mixture cool down but still warm so that it does not solidify; we need to do this step so that when pouring the mixture into the bottle, the bottle does not shrink.

    Prepare a large bowl of ice water, then pour about 1/2 cup of cooking oil into it so that the oil separates from the water.

    Drop the jelly mixture into the bowl, the jelly drops through the layer of oil will form evenly round balls, then they will sink into the ice water to harden, creating the finished pearl.

    You scoop the pearls out and rinse off the oil, then put the pearls in a small bowl, mix in some sugar and a little lemon juice to enhance the flavor.

    After completion, you can add the tapioca pearls to lemon tea or milk tea to enjoy together. With a chewy and crunchy texture, it will surely blend well with the creamy flavor of milk tea or the refreshing sourness of lemon tea, and it will not disappoint you.

How to store cooked tapioca pearls

  • When the tapioca pearls have been boiled, use a sieve to transfer them to a bowl of cold water (ice water is even better) and soak for about 5 – 7 minutes.
  • Pour the tapioca pearls into a colander and wait for them to drain completely for another 7 – 10 minutes.
  • Place the tapioca pearls in a food container, food box, or any stainless steel container and store in a cool place. This method will keep the boiled tapioca pearls for up to 1 day.
  • If you want to keep them longer, place them in the refrigerator refrigerator, and when you want to use them, microwave for about 3 – 5 minutes to enjoy. This method can only preserve the tapioca pearls for 3 – 4 days, so make sure to use them right away for the best taste and to prevent them from spoiling!
