Whipping cream 500 ml Earl Grey tea bags 4 pieces Condensed milk 100 ml Pre-made tapioca pearls 100 gr Black sugar 70 gr

How to Make Black Sugar Bubble Milk Tea Ice Cream

  • Cook the fresh cream and tea

    Cut 1 tea bag, put 4g of Earl Grey tea into the blender, and blend until fine.

    Put 500ml of whipping cream into a pot and boil over medium heat, adding the remaining 3 Earl Grey tea bags and cooking for about 3 minutes on low heat.

    Add the 4g of finely blended tea into the pot and stir well, then turn off the heat and let the tea steep for another 5 minutes, then strain the mixture through a sieve to remove the tea residue and obtain a smooth mixture.

  • Mix and chill the cream mixture

    Wait for the milk tea mixture to cool completely, then place it in the refrigerator for about 2 hours or put it in the freezer, aiming for the mixture to be around 10 degrees Celsius.

    Take the milk tea mixture out of the refrigerator, use a mixer to whip it at medium speed until soft peaks form.

    Add condensed milk to the cream mixture, mix well until the mixture is combined.

    Pour the milk tea mixture into a mold, cover it, and place it in the freezer for 6 – 8 hours or overnight until the ice cream is fully frozen.

  • Making black sugar tapioca pearls

    For ready-made tapioca pearls:

    Boil a pot of water, once boiling, add the purchased tapioca pearls and cook for about 25 minutes until done. Then, remove and place them in a bowl of cold water to cool, then drain.

    Combine 70g of black sugar with 50ml of water and cook until the sugar dissolves. Finally, add this syrup to the drained tapioca pearls and mix well.

    The ice cream is frozen, take it out.

    Using a specialized ice cream scoop, scoop the ice cream into round balls and place them in a cup, then, depending on your taste, add as many or as few tapioca pearls as you like.

    Tip: If you don’t have an ice cream scoop, you can use a large spoon with a slightly deep bowl to scoop ice cream into balls for the cup. After scooping the ice cream, remember to put the remaining ice cream back in the freezer for storage!

Information about Earl Grey tea:

  • Earl Grey tea (Count tea) primarily consists of high-quality Ceylon tea, combined with the flavor of oil from the peel of Bergamot orange. Many tea connoisseurs believe that Earl Grey tea is a blend of the bitter orange flavor from the Mediterranean with the lemon flavor from Southeast Asia.
  • The astringency of Earl Grey tea is at a medium level, with a distinctive strong aroma.
  • Earl Grey tea is a widely popular type of tea in England, but this tea is not entirely a product of England. Many opinions suggest that this tea originated from China. The history of the origin of Earl Grey tea explains that the name of the tea is named after Count Charles Grey – Prime Minister of the United Kingdom (1830 – 1834). While serving as ambassador in China, he accidentally added Bergamot orange essence to black tea, creating a special aroma for the tea. Additionally, some people believe that black tea combined with famous Bergamot essential oil helps balance the spirit and health, hence the name Earl Grey.

Tips for keeping soft tapioca pearls fresh and not hard:

  • After boiling, use a sieve to remove the tapioca pearls, soak them in cold water or rinse under running water to prevent them from sticking, then mix the pearls with brown sugar syrup, and finally keep them warm in a rice cooker (warm-up mode). This method will help keep your pearls soft and not hard for up to one day.
  • To preserve the tapioca pearls for longer, place them in a tightly sealed container or a plastic bag sealed on top, and then put them in the refrigerator. With this method, the pearls can last 3 – 4 days without spoiling.
  • When you want to use them, just boil the tapioca pearls again and use them. However, if you want delicious pearls, you should make and eat them immediately.
