How to choose fresh and delicious shrimp
- Choose shrimp with a hard and translucent shell, smelling of the sea instead of the fishy smell of seafood, as these are fresh shrimp that have just been caught.
- Pay attention to the shrimp’s tail; if the tail is curled together, it indicates fresh shrimp. Conversely, if the tail is spread out, these shrimp may have been injected with chemicals or water to make them swell.
- When picking up the shrimp, if you see the body of the shrimp bending, and pressing lightly on the shrimp causes a slimy liquid to ooze out, that means the shrimp has died or has been frozen for a long time, and is no longer fresh.

How to make shrimp dimsum rice rolls

Prepare the shrimp
After purchasing the shrimp, wash it thoroughly with diluted wine and salt, then cut off the head and tail, peel the shell, and remove the shrimp vein, keeping only the shrimp meat.
Tip: To easily remove the shrimp vein, turn the shrimp over, hold the shrimp body with one hand while peeling the sides of the shrimp head, then firmly hold the joint between the head and the body, gradually pull the shrimp head away from the body. The shrimp vein will quickly come out with the head. -
Mix the rice roll batter
Add 300g of rice flour, 180g of potato flour, 1 tablespoon of cooking oil, 1/2 teaspoon of salt, and 125ml of warm water into a bowl, then use a whisk to mix well until the flour dissolves, and let the batter rest for 20 – 30 minutes.

Stir-fried shrimp
Turn on the stove, add 1 tablespoon of cooking oil, when the oil is hot, add the shrimp along with 1/2 teaspoon of seasoning, then use chopsticks to stir evenly for about 3 minutes until the shrimp is cooked through.

Steaming the cake and rolling the shrimp
Spread a thin layer of cooking oil evenly on the cake mold, then cover and heat the mold in the steamer on low heat for about 3 minutes.
Next, add a ladle of the prepared batter into the cake mold, cover it, and steam for about 5 – 6 minutes. Depending on your preference, if you want the cake to be thick or thin, adjust the amount of batter accordingly!
After the cake is cooked, brush a thin layer of cooking oil on top, remove the mold, let it cool, and then proceed to take the cake out of the mold.
For subsequent steaming, clean the cake mold and then continue to brush a thin layer of cooking oil on the mold, and then steam the cake as usual.
To roll the shrimp, place the side of the cake with the oil facing down, then arrange the shrimp lengthwise on the cake, and roll the cake about 2 turns for a perfect bite.
Tip:
- To help the cake cool quickly after steaming and make it easier to remove from the mold, you should place the cake mold in a bowl of cold water!

Making the dipping sauce
