  • Prepare and Marinate the Shrimp

    To eliminate the fishy smell, after peeling the head, shell, and legs, and deveining the shrimp, soak the shrimp in diluted salt water for 2 – 3 minutes, then rinse with clean water, drain, and chop finely.

    Next, add the finely chopped shrimp to a bowl, then add 1 teaspoon of chopped green onions, 1 teaspoon of minced shallots, 1/2 teaspoon of salt, 1/2 teaspoon of ground pepper, and 1 teaspoon of fish sauce. Use chopsticks to mix well and marinate the shrimp for about 15 minutes to allow the flavors to absorb.

  • Prepare the ingredients

    Shrimp after buying should be washed, peeled, deveined, then split the back of the shrimp in half. Use a pestle to lightly pound the shrimp meat until slightly broken, which will help the shrimp absorb the seasoning more evenly.

    Peel the carrot, wash it clean, and chop it finely. Boil the sweet corn until cooked, and separate the kernels. Chop the green onions and cilantro finely.

  • Fried Eggs

    While waiting for the filling mixture to soak evenly, crack 2 eggs into a bowl along with 1/2 tablespoon of cornstarch and 2 tablespoons of water, adding 1/4 teaspoon of salt to make the eggs flavorful after frying. Whisk the mixture of eggs, cornstarch, and water until well combined.

    Place a pan on the stove, take a paper towel soaked in cooking oil, and then spread a very thin, even layer around the surface of the pan.

    Pour the eggs in and tilt the pan to spread the eggs evenly, frying on low heat until the eggs are just set on the surface. Place on a cutting board and let the eggs cool for about 10 minutes.

    Note:

    • The eggs should be fried on low heat to have enough time to cook through and set the surface, ensuring the bottom of the eggs does not burn.
    • This step of frying the eggs needs to be done evenly; the eggs must cover the surface of the pan well, so that when rolling the filling and seaweed, the eggs do not break or crumble, and the final product looks beautiful.

    After the eggs have cooled, cut the eggs into squares longer than the seaweed leaves by about 1/2 finger length. Then place the seaweed on top of the eggs, spread the shrimp and meat filling evenly while leaving about 1/2 finger length free, and roll the eggs, seaweed, shrimp, and meat together like a sushi roll.

    Next, bring 1.5 liters of water to a boil in a pot over high heat, then place each egg roll into the steamer, set the steamer over the pot, and cook on high heat for about 5 minutes, then reduce to medium heat and continue steaming for about 3 more minutes until the shrimp and meat filling is cooked, then turn off the heat.

    Take the cooked egg rolls out and cut them into bite-sized pieces about 1.5 – 2 finger lengths long. Now you can arrange them on a plate and enjoy!

    Tip:
    • To prevent the egg rolls from breaking, don’t roll them too tightly!
    • To make rolling easier, when you get to the part of the seaweed without filling, dampen it slightly with water so that the seaweed sticks better to the egg layer.

How to quickly remove shrimp’s back vein
