How to make Japanese chicken curry rice

  • Prepare the ingredients

    Peel and wash the carrots and potatoes, then cut them into bite-sized pieces about the size of a finger joint.

    Peel the onion, wash it, and cut it into wedges.

    To eliminate the fishy smell of the chicken thighs, wash them with water, then soak the chicken thighs in diluted salt water for 15 minutes.

    After that, use scissors to remove the bones in the middle, then rinse with clean water and let them drain.

  • Fry chicken thighs

    Crack 1 egg into a bowl and use a whisk to beat the yolk and the white until well combined. Pour 4 tablespoons of cornstarch into another bowl.

    Then, take the chicken thighs and coat them evenly with the cornstarch to cover the outer skin, then roll them in the egg. Repeat this step twice to get a good coating on the chicken.

    After coating the chicken thighs with the batter, place them in the air fryer, set the temperature to 200 degrees Celsius, and bake for 15 minutes.

    After 15 minutes, turn the chicken over and bake for an additional 7 minutes. Once done, transfer the chicken to a plate to cool.

  • Sauté vegetables

    Place a large pot on the stove, turn on medium heat, and add 2 tablespoons of cooking oil. When the oil is hot, add the prepared carrots to the pot and stir for about 5 minutes until the carrots are cooked.

    Then add the potatoes and onions, and season with 1 teaspoon of salt, stirring well for about 3 minutes.

  • Cooking curry

    Sautéed vegetables, add about 700ml of water and bring to a boil.

    When the water just starts to boil, add the Japanese curry cubes into the pot, stir well, and keep on medium heat until the curry cubes are fully dissolved.

    Season the curry with 2 teaspoons of seasoning powder, 1/2 teaspoon of salt, 1 tablespoon of chili powder, 1 teaspoon of fish sauce, 1 teaspoon of pepper, and stir well for the spices to fully dissolve.

    When the water boils again, taste and adjust the seasoning to suit your family’s preference, then turn off the heat.

    Place the rice in a bowl, press it down lightly, then invert it onto the center of the plate. Use scissors to cut the chicken thigh into bite-sized pieces and arrange them on top of the rice. Then pour the curry sauce around the rice and enjoy!

    The Japanese curry has the creamy texture of potatoes, the sweetness of carrots, the crispy outer layer of the chicken thigh, juicy on the inside, and fragrant sticky white rice.
