How to choose fresh ingredients
How to choose fresh chicken thigh meat
- You should buy from large supermarkets of brands specializing in ready-to-cook chicken that has been processed. You should choose chicken thighs produced on the same day.
- The meat inside should look bright red, not pale, the skin should still stick to the meat and show no dark spots.
- You should not buy chicken thighs if they feel slimy to the touch or have an unusual smell.
How to choose fresh and delicious potatoes
- Choose potatoes with a yellow, smooth skin; these will taste sweet and have a lot of nutrients when eaten.
- Fresh and delicious potatoes will feel firm in your hand, with a hard texture and not soft due to wilting or being stored too long.
- Do not buy potatoes that have sprouted or have green skin as these can be very harmful to health.
How to choose fresh and delicious carrots
- Choose carrots of moderate size, elongated shape towards the tail, with smooth skin, and feel heavy and firm when picked up.
- Delicious carrots will have a bright, deep orange skin, fresh leaves attached firmly to the body.
- Do not choose carrots with wilted tops, bruised or blemished spots.
- Avoid buying overly large carrots with thick stems and shoulders as these are old carrots, fibrous, and low in nutrients.
How to choose fresh and delicious onions
- Choose onions with thin, shiny, uniformly colored skin, with many roots, and feel dry when touched.
- It is advisable to choose onions of moderate size that feel firm in hand for better cooking quality.
- Avoid buying onions that have sprouted, with hard and soft spots, and uneven coloring as these are not fresh and may taste bitter.

How to make Japanese chicken curry rice
-
Prepare the ingredients
Peel and wash the carrots and potatoes, then cut them into bite-sized pieces about the size of a finger joint.
Peel the onion, wash it, and cut it into wedges.
To eliminate the fishy smell of the chicken thighs, wash them with water, then soak the chicken thighs in diluted salt water for 15 minutes.
After that, use scissors to remove the bones in the middle, then rinse with clean water and let them drain.
-
Fry chicken thighs
Crack 1 egg into a bowl and use a whisk to beat the yolk and the white until well combined. Pour 4 tablespoons of cornstarch into another bowl.
Then, take the chicken thighs and coat them evenly with the cornstarch to cover the outer skin, then roll them in the egg. Repeat this step twice to get a good coating on the chicken.
After coating the chicken thighs with the batter, place them in the air fryer, set the temperature to 200 degrees Celsius, and bake for 15 minutes.
After 15 minutes, turn the chicken over and bake for an additional 7 minutes. Once done, transfer the chicken to a plate to cool.
-
Sauté vegetables
Place a large pot on the stove, turn on medium heat, and add 2 tablespoons of cooking oil. When the oil is hot, add the prepared carrots to the pot and stir for about 5 minutes until the carrots are cooked.
Then add the potatoes and onions, and season with 1 teaspoon of salt, stirring well for about 3 minutes.

Cooking curry
Sautéed vegetables, add about 700ml of water and bring to a boil.
When the water just starts to boil, add the Japanese curry cubes into the pot, stir well, and keep on medium heat until the curry cubes are fully dissolved.
Season the curry with 2 teaspoons of seasoning powder, 1/2 teaspoon of salt, 1 tablespoon of chili powder, 1 teaspoon of fish sauce, 1 teaspoon of pepper, and stir well for the spices to fully dissolve.
When the water boils again, taste and adjust the seasoning to suit your family’s preference, then turn off the heat.
