- Fermented rice, also known as fermented rice, is a basic seasoning in Vietnamese cuisine. This traditional seasoning has a sour taste and a very distinctive aroma, often used in many dishes such as hot pot, stews, sour soups, etc.
- You can buy fermented rice at markets, liquor stores, or make it at home with a recipe from TasteVN.
How to make sour soup with giant snakehead fish and fermented rice
-
Prepare the giant snakehead fish
To clean and eliminate the fishy smell of the giant snakehead fish, use a knife and scissors to remove all fins, internal organs, and blood vessels attached along the fish’s backbone. Then, rub the fish evenly with salt for about 15 minutes and rinse with water several times.
Add 8 tablespoons of cooking oil to a pan; when the oil is hot, add the giant snakehead fish and fry over medium heat until the fish is cooked evenly. To ensure the fish is crispy on the outside and cooked inside without burning, be sure to flip the fish every 3 minutes.
Once the fish is cooked, remove it and let it drain the oil.
-
Prepare other ingredients
Remove the stems from the tomatoes, wash them clean, and slice them thinly for eating.
Wash the dill and let it drain.
-
Stir-fried tomatoes
Add 2 tablespoons of cooking oil to the pot, when the oil is hot, add the tomatoes and stir-fry over medium heat, turning both sides until the tomatoes are cooked.
-
Cook the soup
Once the tomatoes are stir-fried, add 1 liter of water to the pot, cook over high heat until the water boils vigorously.
When the water boils, add the snakehead fish, cook over medium heat until the water boils again. Next, put the tamarind into a strainer, place it directly into the soup pot and use a spoon to stir the tamarind, extracting all the clear tamarind juice.
Then, season the soup with 1 tablespoon of sugar and 2 teaspoons of salt. Finally, chop the dill and stir it into the soup, cooking for another 2 minutes to complete.
Tip:- In addition to the above seasoning method, you can adjust the seasoning to your family’s taste for a more palatable soup.
- During the cooking process, be sure to skim off any foam to help keep the soup clear and tastier.
-
Final Product
Hot and sour fish soup with cobia, with a cloudy yellowish color, tender fish meat, sweet and fatty, very delicious. The broth has a light sour taste thanks to the tamarind, fragrant with dill, perfect to enjoy with a bowl of hot rice!
How to Choose Fresh and Delicious Cobia
- Fresh and delicious cobia is best when alive, scales intact, firm flesh, and clear eyes.
- When selecting fish, check the gills; if they are still red, the fish is fresh, but if they are pale or dark, the fish has begun to spoil.
Effective Ways to Remove the Fishy Smell from Cobia
- Method 1: Rub salt all over the fish for about 2 – 3 minutes, then rinse with water to remove the fishy smell.
- Method 2: Mix a little alcohol into water and soak the fish for about 1 minute, then rub the fish evenly to help clean and eliminate the fishy smell.
- Method 3: Using a diluted vinegar/lemon mixture to wash the fish is also effective in removing the fishy smell.
How to Choose Fresh and Delicious Tomatoes
- You should choose tomatoes that are fresh, juicy, with smooth, shiny skin, and bright red color.
- Only select those that are intact, without scratches or bruises, and have no unusual spots.
- Choose those with a light, characteristic aroma, without any strange smell.
- It’s best to choose those still with stems; gently pull on the stem, and if it stays firmly attached to the fruit, you can purchase it.
