How to prepare Pineapple Braised Ribs

  • Prepare the pork ribs

    To clean the dirt and remove the odor from the pork ribs, after purchasing, cut into pieces about 2 finger lengths, soak in diluted salt water for about 5 minutes.

    Next, blanch briefly in boiling water for 2 minutes, then rinse thoroughly with water and let drain.

  • Prepare other ingredients

    Shallots and garlic, peel, crush and finely chop 1 shallot, and 1 clove of garlic.

    Then put the remaining shallots and garlic into a mortar, add 2 chili peppers, 1 tablespoon of seasoning, 2 tablespoons of sugar, 1/2 tablespoon of salt, and pound into a fine paste for marinating sauce.

    You can buy pre-peeled pineapple to save time or buy a whole pineapple, peel it, remove the eyes, cut off the core, and cut it into bite-sized pieces.

    Quick tips for peeling pineapple without cutting out the eyes

    • First, cut the pineapple vertically from top to bottom into 4 equal parts.
    • Continue to cut lengthwise along the piece of pineapple, stopping at the end of the fruit and cutting hard to remove the flesh and discard the skin.
    • Do not cut too close to the skin to avoid leaving any eyes. Finally, cut into smaller pieces as needed.

  • Marinate the ribs

    Put the marinade into a bowl of ribs. Mix well and marinate the ribs for about 30 – 40 minutes to absorb the seasoning.

  • Sauté the pineapple

    Put a pan on the stove over medium heat, add 3 tablespoons of oil, when the oil is hot, sauté chopped shallots and garlic until fragrant.

    Then add the pineapple, 1 tablespoon of sugar, and sauté briefly over low heat for about 3 minutes until the pineapple is just cooked.

    Tip: It is recommended to sauté the pineapple first in the pan to shorten cooking time, allowing the pineapple to absorb the seasoning and become more aromatic.

  • Pork Ribs Braised with Pineapple

    When the pineapple is cooked, take it out and place it in a bowl, then put the pork ribs in the pan, stir evenly on high heat for about 5 minutes until the ribs are seared and cooked evenly.

    Add 300ml of water to the bowl with the marinated ribs, swirl it around to dissolve any remaining spices, then pour it into the pan.

    Cook until the water comes back to a boil, then reduce the heat, cover, and simmer the meat for about 20 minutes for the meat to become tender and absorb the spices evenly.

    Tip: During the simmering process, every 10 minutes, you should open the lid and turn the meat over to ensure the meat is evenly colored and absorbs the spices.

    After 20 minutes, add the pineapple and 4 chili peppers, stir well and continue braising for another 2 minutes, seasoning to taste.

    Then add the chopped green onions and a little pepper on top, then turn off the stove, plate it on a plate, and decorate it nicely to complete the dish.

  • Prepare the ingredients

    Pork ribs purchased should be rinsed once with water to remove any unpleasant odor, then massage the ribs with salt for about 2 – 3 minutes, rinse again, and cut into bite-sized pieces, then let them drain.

    Mix the ribs evenly with 1 spoon of seasoning powder, 1 teaspoon of monosodium glutamate, 1/2 teaspoon of pepper, 1 tablespoon of oyster sauce, and 1 tablespoon of fish sauce. Marinate for about 20 minutes to allow the ribs to absorb the seasoning.

    Pineapple should be peeled, eyes removed, washed clean, and then cut into bite-sized pieces.

    Method 1: Massage the pork ribs with coarse salt for about 3 minutes, then rinse under running water until clean.
