Pork ribs 600 gr Quail eggs 10 pieces Pickled mustard greens 300 gr Tomato 1 piece Green onion 10 gr Chili pepper 1 piece Red chili 3 pieces Minced onion/ garlic 2 tablespoons Fish sauce 2 tablespoons Annatto oil 1/2 teaspoon Cooking oil 1 tablespoon Common spices a little (Salt/ pepper/ sugar/ seasoning powder)

How to choose good pork ribs

  • Fresh spare ribs have a light pink color, are elastic to the touch, and have no rancid smell.
  • You should choose ribs with small, flat bones. This type of rib has more meat and less bone compared to larger, round ribs.
  • For stewed dishes, it is best to choose ribs with more lean meat and little or no fat. Including cartilage will make your dish more delicious.

How to choose good pickled mustard greens

  • For packaged types, you need to check the expiration date, ensure the packaging is intact, and observe for any mold or bubbles.
  • You should choose pickled mustard greens that are yellow to earthy yellow, as these have the right level of sourness for cooking. Greens that are still green are due to insufficient pickling time and will taste spicy.

How to make Braised Pork Ribs with Pickled Mustard Greens

  • Prepare and marinate the pork ribs

    When you buy the pork ribs, wash them clean, drain, and marinate with 1 tablespoon of minced onion, 1 tablespoon of minced garlic, 1.5 tablespoons of sugar, 1/2 tablespoon of seasoning powder, 1/3 teaspoon of pepper, 1/2 teaspoon of salt, and 2 tablespoons of fish sauce.

    Mix well and let the ribs marinate for about 15 minutes.

    How to clean the ribs, removing the smell

    • Use salt to rub with the ribs for about 2 – 3 minutes and then rinse with clean water.
    • Using rice vinegar or white wine to wash the ribs also helps reduce the odor.
    • You can also blanch the ribs in boiling water with a few smashed ginger slices, then rinse with clean water.
    • Wash the ribs with diluted salt water to remove dirt from the meat and eliminate the smell of the ribs.

    Cut the chili peppers into pieces, crush 3 regular chili peppers. Clean the scallions and cut them into bite-sized pieces. Cut the tomatoes into wedges.

    Wash the pickled mustard greens with clean water and then cut them into square pieces about 2 finger lengths.

    Boil the quail eggs until cooked, let them cool, and peel off the shells.

  • Cooking the dish

    Add 1 tablespoon of cooking oil and 1 tablespoon of sugar to the pan, turn on medium heat to caramelize the sugar until it turns golden brown.

    Then add 1 tablespoon of chopped onion and garlic to sauté until fragrant. When the onion and garlic are golden and aromatic, add the ribs and stir evenly.

    When the meat has browned, add the pickled cabbage, cut chili, crushed chili, and 1 cup of hot water, then cover and simmer on low heat for 20 minutes until the meat is tender and the liquid reduces.

    Tip: Adding hot water when braising the ribs helps the ribs to brown and retain their sweetness.

    Once the ribs are cooked, open the lid and add 1/2 teaspoon of annatto oil, tomatoes, and quail eggs, then stir well and cook for another 2 minutes, adjusting the seasoning to taste.

    Add green onion and turn off the heat.
