How to choose fresh chicken
- You should choose chicken pieces that have a light pink color, with thin skin, and see the yellow fat layer underneath.
- Press the chicken meat with your hand, if the chicken is firm and has a certain elasticity, these are the pieces of chicken that are chewy, delicious, and meaty, which do not fall apart when eaten.
- Do not choose chicken with purple skin color, or with bruises on the skin, as this indicates that the chicken is not fresh and may have died before being processed.
How to choose fresh quail eggs
- Choose eggs that have a sturdy shell, feel smooth to the touch, and have no cracks on the surface.
- When you shake the egg, listen closely; if it makes a small sound like liquid sloshing, it means the egg is old and not tasty.
- Do not buy eggs with cracked or broken shells, those with liquid leaking out, and avoid eggs with unusual odors.
How to cook Braised Chicken with Quail Eggs

Prepare the chicken and other ingredients
After buying the chicken, wash it thoroughly with water, cut off the fat gland at the chicken’s tail to reduce the fishy smell.
Next, use coarse salt to rub on the chicken, then cut a lemon in half and rub it on the chicken again before rinsing with water.
Finally, chop the chicken into small bite-sized pieces.
Tip: You can also remove the fishy smell from the chicken by mixing vinegar and salt, then pouring the mixture over the chicken and rubbing it inside and out before rinsing with water! -
Marinate the chicken
Add 1/3 teaspoon of monosodium glutamate, 1/2 tablespoon of seasoning into the chicken meat, then mix well so that the chicken absorbs the spices, and marinate the chicken for about 15 minutes.

Making the braising sauce
Add 1 tablespoon of soy sauce, 1 tablespoon of fish sauce, 1/2 tablespoon of seasoning powder, 1/2 tablespoon of monosodium glutamate, 1/2 tablespoon of sugar, and 1 tablespoon of caramel sauce, then stir well until the ingredients are evenly dissolved.

Fry quail eggs and chicken
Turn on the stove to low heat, add about 240ml of cooking oil to the pan. When the pan is hot, add the boiled quail eggs (peeled) and fry for about 3 minutes until the eggs are golden brown on all sides, then remove the eggs from the pan.
Next, add the chicken to the same pan where you just fried the eggs, and fry the chicken for about 5 – 7 minutes until it is golden brown. While frying, remember to use chopsticks to turn the chicken to ensure it cooks evenly!
Tip: You should fry the quail eggs and chicken before braising to help these ingredients absorb the seasonings better and taste more delicious. -
Chicken braising
Turn on the stove, add a little cooking oil to the pot, and sauté ginger and shallots until fragrant.
Next, add the chicken and quail eggs in turn, then evenly pour the braising sauce over the ingredients and gently stir with a spoon.
Add about 250ml of water and proceed to braise for about 7 – 10 minutes until the braising sauce thickens and the chicken is tender, then turn off the stove.
Sprinkle a little chopped green onion and sautéed shallots into the pot to enhance the flavor of the dish.
Tip:- You can braise the chicken with coconut water to make the dish sweeter.
- To make the eggs absorb flavor better, you can poke them with a toothpick.
