  • You should choose pineapples that have a bright yellow color from the stem to the end, or maybe some spots are still green. Those are ripe, sweet fruits.
  • When holding a good pineapple, you will feel it is firm, not too soft, with a characteristic fragrant smell. Additionally, round, short fruits will have more flesh compared to long cylindrical ones.
  • You should avoid choosing fruits that are turning brown or red as they are overripe, and the top will be dry and not tasty. Also, avoid buying fruits that are soft, with wrinkled skin, and when pressed, they feel indented.

  • Prepare the snails

    You smash the tail (the bottom part) of the apple snails, then rinse the snails 3 – 4 times with water and let them drain.

    You soak the snails in rice water and add 2 – 3 chili peppers, then soak for 3 – 4 hours to allow the snails to release all the mud and slime, then rinse with clean water 3 – 4 times.

    You smash the lemongrass and cut it into 5cm pieces, slice the bird’s eye chili, and julienne the bell pepper.

    You crush the chives, cut the kumquat in half and squeeze out the juice, finely chop the peel.

    When buying pineapple, you ask the seller to cut off the eyes or cut them off at home, then cut it in half and chop into bite-sized pieces. Take 5 pieces of pineapple to blend or pound into a paste, then strain to get the pineapple juice.

    You put a pot of water on the stove, turn on medium heat and wait for it to boil, then add 1 tablespoon of seasoning, 2 smashed lemongrass stalks, then add the snails and blanch for about 1 minute before removing them to drain.

    You put a pan on the stove and turn on high heat, wait for the pan to heat up then add 2 tablespoons of cooking oil to sauté the lemongrass.

    Next, you add the chives and apple snails, 2 chili peppers, season with 1.5 tablespoons of seasoning, add the fragrant and extracted essence and stir-fry for about 4 minutes then turn off the heat.

How to prepare Stir-fried Snails with Bamboo Shoot

  • Prepare the ingredients

    After buying the snails, wash them and rub them with vinegar and salt to remove the fishy smell and slime.

    You need to check carefully and ensure that you cut off all the orange-colored stomach parts of the snails. For larger snails, use a knife to cut them in half, while keeping the smaller snails whole.

    Next, place a pot on the stove and boil water with 1 teaspoon of salt. Then, add all the snail meat and blanch for about 5 minutes, then rinse with cold water to make the snails crispy.

    For the betel leaves and perilla, wash them thoroughly and cut them into thin strips.

  • Boiling bamboo shoots

    You boil another pot of water and add the bamboo shoots to cook on low heat for about 10 – 15 minutes to remove toxins. Then, you take the bamboo shoots out and rinse them with cold water.

    If you are using leaf bamboo shoots, use a knife to shred the bamboo into bite-sized pieces. After shredding, soak the bamboo shoots in cold water mixed with 1 teaspoon of salt to keep the shoots crispy and prevent them from browning.

    If you are using root bamboo shoots, slice them thinly. Then, boil water with 1 teaspoon of salt. When the water is boiling, add the bamboo shoots and cook thoroughly until the water boils again to remove toxins and bitterness from the bamboo shoots.

    Once the bamboo shoots are boiled, soak them in cold water to maintain their crispness, then rinse them 2 – 3 times until the water runs clear without yellow color.

  • Cooking the dish

    You place a pan on the stove, then add 1 tablespoon of cooking oil and 1 teaspoon of minced garlic, frying until the garlic is fragrant and golden.

    Next, you add the prepared snail meat and stir-fry briefly with 1 teaspoon of salt and 1 teaspoon of seasoning. Once the snails are stir-fried, place them on a separate plate.

    Note: Do not stir-fry the snail meat for too long as this will make it tough and less enjoyable to eat.

    Next, you use a pan to continue stir-frying the bamboo shoots, stirring evenly for about 2 minutes, then add 1 bowl (rice bowl) of snail water and cook over high heat.

    Once the water in the pan boils, add the stir-fried snail meat and stir well.

    Then, add the shredded Vietnamese coriander and wild betel leaves, season to taste according to your family’s preference, and turn off the heat.

How to clean snails to reduce slime
