Preparing the snails
Soak the snails in rice water for 2 – 3 hours to help them expel the slime; add 1 sliced chili to make the snails release the slime faster. Then, rinse the snails under strong running water, using a brush to clean the slime off the shells and the openings.
Next, place a pot on the stove, add the snails, and boil for about 7 – 10 minutes on high heat with 3 stalks of lemongrass cut into pieces and smashed, along with 1/2 a piece of ginger sliced.
After about 10 minutes, if you see the snails open their mouths, they are cooked. Use a sharp tool to scoop the snail meat out of the shells. Rinse the snail meat with diluted salt mixed with a bit of vinegar, then rinse again with clean water.
After cleaning, drain the snail meat in a colander, then put it in a blender to grind finely.

Prepare the ingredients
Soak the shiitake mushrooms in warm water for about 10 minutes to expand and soften, then rinse clean, chop finely with a knife or use a blender to grind small.

After washing the lemongrass thoroughly, separate each stalk of lemongrass and cut them into short pieces about the length of one finger, then place them at the mouth of the snails. Use a spoon to stuff 1/2 of the snail filling mixture into the snails until full. The remaining 1/2 of the filling mixture can be rolled into a ball and pressed slightly flat.
After stuffing the mixture into the snails, arrange each snail and the pressed filling into a steaming basket. Place a pot on the stove and steam for about 5 – 10 minutes.
Once the surface of the snails has firmed up, prepare a mixture of: 3 tablespoons of egg yolk and 3 tablespoons of water, and mix well.
Next, use a brush to coat the mouth of the snails and the surface of the filling to give the snail filling an appealing golden color. Steam for an additional 5 minutes until fully cooked.

Fried snail cake
Before placing the snail cake in the air fryer, preheat the air fryer to 200 degrees Celsius for 15 minutes to ensure the interior is evenly heated.
Then, arrange the snails in the fryer, frying at 200 degrees for 10 minutes until the snail cake is golden brown on all sides. Finally, when the snail cake is cooked, remove it to a plate to cool and decorate.
