How to choose fresh and delicious pork belly
- To buy good pork belly, you should choose pieces with a balanced amount of lean meat and fat, a thick outer layer of skin, fat about 2/3 the width of your finger, and the lean meat tightly attached to the layer of fat. However, be careful, to buy pork belly that is just right and not too tough, you should not choose pieces with an outer layer of fat and skin that are too thick because that indicates an older pig.
- Additionally, fresh pork belly will have a dry outer membrane, light red or bright pink color. When cut, the piece of meat should be bright pink, with white-pink skin that is soft. The fat interspersed with the lean meat should be bright and firm.

Prepare the carp and pork
To clean and eliminate the fishy smell of the carp, you need to cut off the fins, head, scrape off the scales, and remove the blood vessels attached to the spine of the fish. Then rinse thoroughly with several changes of water.
Effective ways to eliminate the fishy smell
- Using salt: Add a little salt to diluted water, soak the fish for about 15 minutes, then rinse thoroughly with water.
- Using rice water: Soaking the fish in rice water also helps effectively eliminate the fishy smell.
- Using alcohol: Soak the fish in water containing a little alcohol or lemon juice for about 15 – 20 minutes, then rinse clean.

For the pork, to remove dirt and unpleasant odors, place the meat in a bowl with 1/2 tablespoon of salt, then pour boiling water over it until submerged, blanch the meat for about 5 – 7 minutes, then remove. Rinse the meat with cold water and let it drain.

Prepare other ingredients
Ginger and galangal after buying should be peeled, washed clean, and sliced thinly. Shallots should be peeled and crushed.

Cook the stew sauce
Place a pan on the stove, add 1 tablespoon of cooking oil and heat it, then add 1/3 of the crushed shallots, 3 small chili peppers, all the sliced galangal and ginger into the pan to sauté until fragrant.
When the ingredients become aromatic, pour in 750ml of filtered water, then add 1/2 tablespoon of pepper, 4 tablespoons of sugar, 1 tablespoon of seasoning, 2 tablespoons of caramel sauce, 1 teaspoon of annatto oil, 1.5 tablespoons of monosodium glutamate, and 2 tablespoons of soy sauce.
Stir well and cook over medium heat until the ingredients are completely dissolved and the sauce boils, then turn off the heat.
