Prepare the Banded Snakehead Fish
After buying the Banded Snakehead Fish, it needs to be prepared immediately to maintain its freshness, as this type of fish is not as resilient as the common tilapia or other types of fish.
You should clean it thoroughly, then remove the gills, cut off the fins and tail, and gut it to remove the intestines.
In particular, keep the entrails, especially the gallbladder. The entrails of the Banded Snakehead Fish are very delicious, and the small gallbladder has a slightly bitter taste, which when braised will blend well with the rich flavor of fermented soybean paste, making it very appetizing.
After the fish is prepared, rub it with salt thoroughly and then rinse it clean, let it drain completely before marinating the fish.

Prepare other ingredients
For green bananas, use a knife to peel off the outer green skin, then cut off both ends of the bananas.
Make horizontal cuts on the banana’s body about 1/4 of a finger’s length, and place them in a bowl of water mixed with a little salt to prevent the bananas from discoloring during preparation.
After about 10 minutes, take each banana out one by one and cut them into diagonal slices about 1/2 of a finger’s thickness. Once cut, soak the bananas back into the salted water.
