Prepare the ingredients
For the shrimp, remove the head, peel off the shell, and pull out the black vein along the back, then wash them thoroughly with water and let them drain.
How to peel shrimp and clean the black vein quickly
- First, use your hand to break off the shrimp head.
- Next, peel the shrimp shell starting from the belly and then around the body. For the shell at the tail, hold the tail tightly and pull it back.
- To remove the black vein, use a knife to make a cut along the back of the shrimp to expose the vein, then use a knife or a pointed bamboo skewer to hook it out. Be careful at this step to avoid breaking the vein.
Add the shrimp to the bowl and marinate with 1/2 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of sugar, 1/2 teaspoon of fish sauce, a little ground pepper, and some finely chopped green onions, mix well and let it sit for about 15 – 20 minutes for the shrimp to absorb the seasoning.
Clean the squash blossoms by removing the sepals, then use scissors to cut off the stamen and any old stems, leaving about 5 – 6cm of the stem, peel off the outer skin and break them into bite-sized pieces.
Soak the squash blossoms in diluted saltwater for about 15 minutes, then rinse thoroughly and let them drain.
Trim the roots off the green onions, wash them clean with water, and let them drain. Chop the green parts and the tops of the onions separately.

Place a pot on the stove, add 1 tablespoon of cooking oil and heat it up, then add the chopped green onion tops and sauté until fragrant.
When the onions are aromatic, add the marinated shrimp and stir-fry for about 3 – 5 minutes until the shrimp is firm.
Next, pour in 700ml of filtered water, turn up the heat, and bring it to a boil.
When the water has boiled for about 5 minutes, add the squash blossoms, then quickly add 1/2 teaspoon of salt, 1/2 teaspoon of sugar, and stir well.
Wait for the water to boil again for another 5 minutes, adjust the seasoning to taste, then turn off the heat and add the green onions and a bit of ground pepper, and it’s done.
