Prepare Job’s tears and ginkgo nuts
Put the Job’s tears into a bowl, add enough water to cover them, then soak for about 30 minutes to 1 hour until the seeds swell and soften, then drain and rinse.
Use a pestle to crack the hard outer shell of the ginkgo nuts, then peel off the outer shell and the inner skin. Finally, remove the inner seed of the ginkgo nut to prevent bitterness during cooking, and it is complete.

Prepare the dried tofu skin
If you don’t have fresh tofu skin, you can use dried tofu skin as a substitute. First, soak the dried tofu skin in warm water for about 10 – 15 minutes until it softens, then remove it.
Next, use scissors to cut the softened tofu skin into bite-sized pieces and place them in a bowl.

Cook the Bo Bo dessert with ginkgo
Add 700ml of filtered water along with the soaked bo bo seeds into the pot. Place the pot on the stove, bring to a boil over high heat, when the water boils, add the ginkgo seeds, reduce to medium heat and cook for another 15 minutes.
After 15 minutes, add the cut tofu skin along with 300ml of warm water to the pot. Lower the heat and cook for another 15 minutes until the ingredients are soft.
Finally, add 100g of rock sugar to the pot, use a ladle to stir until the sugar completely dissolves, then taste and adjust to your liking before turning off the heat.
