How to prepare Sake with Ginkgo

Prepare and boil sake
Peel the sake, remove the core, and cut it into small pieces about the thickness of a finger, then soak them in a bowl of water mixed with 1/2 teaspoon of salt for about 10 minutes to remove the sap, then take it out and rinse with clean water and let it drain.
Put a pot of water on the stove, add 250g of cleaned sake, and boil for about 10 – 15 minutes over high heat until soft. Once the sake is cooked, take it out and let it drain in a colander.

Prepare and boil ginkgo
150g of ginkgo, once bought, crack the shell and take out the inner seed.
Put a pot of water on the stove, add the ginkgo seeds and cook for about 20 – 30 minutes over high heat until the ginkgo seeds are soft.
When the ginkgo is cooked, transfer it to a bowl of cold ice water, the brown silk skin will automatically peel off, then take the seeds out to drain.

Cooking tapioca pearls
Place a pot of water on the stove, add 40g of tapioca pearls to cook until done, when the water boils and the tapioca pearls become transparent, use a sieve to remove them. To prevent the tapioca pearls from sticking together, soak them in a bowl of cold ice water and then drain them.
