How to Make Lotus Seed and Water Chestnut Sweet Soup

  • Prepare Ingredients

    Fresh lotus seeds that you buy, peel off the shell, take out the lotus seed core, and then soak the lotus seeds in water for 2 – 3 hours so that they soften, making them cook faster.

    Next, place a pot on the stove, add 800ml of water along with 200g of softened lotus seeds, and cook over medium heat for about 15 minutes until the lotus seeds are soft, then remove the lotus seeds and place them in a bowl.

    Peel the water chestnuts and immediately put them in a bowl of clean water. Soak them until you finish peeling all the remaining water chestnuts, then rinse them with clean water and use a knife to cut the water chestnuts into bite-sized pieces.

How to prepare Lotus seed, Water chestnut, and Longan dessert

  • Prepare the ingredients

    For convenience in preparation, you can buy peeled lotus seeds and pre-removed lotus hearts at the market. When you get home, just soak them in water for about 1 hour to soften the lotus seeds for easier cooking.

    As for the red dates, you should also soak them in water for 1 hour to allow them to swell and soften.

    After purchasing the water chestnut, use a peeling knife to remove the outer skin and then rinse it with water to clean.

    Tip: After peeling, you should soak the water chestnut in a bowl of cold water for 5 – 10 minutes to prevent them from turning dark.

  • Cook the tea

    Place a pot on the stove, then add 2 liters of filtered water, bring to a boil over high heat for about 2 minutes until the water boils, then add all the longan, red dates, and 300g of rock sugar.

    Cook for about 10 minutes over medium heat until the rock sugar dissolves and the other ingredients absorb the syrup, then add the boiled lotus seeds and lotus root.

    Continue to cook for another 15 minutes over low heat for the tea to boil and absorb evenly into the lotus seeds and lotus root, then turn off the heat. Scoop the tea into a bowl and add some ice cubes to enjoy!
