- You should choose fruits that are still attached to the branch, in whole clusters. Avoid buying fruits that are cracked, detached from the branch, and have a sour, rotten smell.
- Ripe longan usually has a dark brown color, with the veins on the skin expanded, and when touched, the skin feels slightly bumpy and gives off a fragrant smell.

Peel and remove seeds from longan
Wash the longan, peel about 1/2 to 1/3 of the skin. Then, use the end of a spoon to press into the flesh of the longan near the stem, rotating until the seed separates from the flesh. Gently flick the longan seed away.
Continue doing this until you finish with all the longan.

Dry longan in the oven
Cover the baking tray with foil, arrange the longan flesh on the tray. Ensure the flesh side is facing up to prevent steaming.
After arranging all the longan, place the tray in the oven. Adjust the temperature between 100°C – 120°C and bake for about 3 hours.
Tip: If you do not use an oven, you can sun-dry the longan for 2 – 3 days until it is dry, the flesh shrinks, and turns brown. -

How to preserve longan
- After drying, let the longan cool completely, then put it in a bag or jar that is clean, seal it tightly, and store it for 1 – 2 months at room temperature in a dry, cool place, avoiding direct sunlight.
- You can add a desiccant packet to the jar containing the longan or store the longan in the fridge refrigerator to extend its shelf life. With this method, you can increase the storage time to about 2 – 3 months!
