Ingredients for Herbal Milk Tea For 4 cups

Oolong tea 90 gr Pennywort 100 gr Condensed milk 315 gr Cream powder 500 gr Whipping cream 200 ml Agar powder 12 gr Granulated sugar 150 gr Syrup 20 ml

How to choose fresh pennywort

  • Choose pennywort with intact leaves and stems, leaves not bruised, and with the characteristic smell of pennywort.
  • Choose fresh pennywort, with young green or dark green leaves, juicy stems, without black spots or white spots on the leaves.
  • It is better to choose pennywort with small leaves, dark green color, and short stems for a richer and tastier flavor than pennywort with large leaves and long stems.

How to make Pennywort Milk Tea

  • Prepare the ingredients

    Fresh pennywort should have the stems trimmed and remove any yellowed or wilted stems. Then wash thoroughly and let drain.

  • Make the pennywort extract

    Add the washed pennywort into the blender, pour in about 60ml of clean water.

    Cover the lid and turn on the blender at low speed to blend the pennywort with the water first, then gradually switch to high speed, blending until the pennywort is finely pureed without any lumps.

    Next, pour the blended pennywort through a filter bag, squeezing to extract the pennywort juice, and discard the residue.

  • Make pandan jelly

    First, mix 150g of white granulated sugar with 12g of agar powder.

    Put a pot on the stove, add about 1 liter of filtered water to the pot, bring to a boil over high heat, and then turn off the heat. After that, gradually add the mixture of sugar and agar powder to the pot while stirring continuously.

    Continue to stir the mixture until the sugar completely dissolves. Next, turn the heat back on and bring it to a boil over high heat for 5 minutes, skimming off the white foam to keep the jelly clear.

    After 5 minutes, reduce to medium heat and add 200ml of cream, stirring well until the cream is fully dissolved.

    Finally, add 2/3 of the pandan juice into the pot, stir well, and turn off the heat. Pour the mixture into a mold, let it cool, and place it in the refrigerator for about 2 – 3 hours for the mixture to fully set.

    Tip: When adding the agar powder, you must stir continuously; otherwise, the jelly will clump.

  • Steeping tea

    You put about 90g of oolong tea into a tea bag and place it in a pot or container if available.

    Next, pour about 2.5 liters of boiling water into the container. Cover it and steep for 20 minutes to extract the tea.

    After steeping, squeeze the tea bag to extract all the liquid, removing the tea leaves.

  • Preparing milk tea

    To make milk tea, add about 500g of creamer to the tea container, along with 2.5 teaspoons of salt. Use a whisk to stir and mix the ingredients well.

    Next, add about 315g of sweetened condensed milk to the milk tea mixture, stirring well to combine all ingredients.

    Then, add about 300g of ice cubes and stir well to cool down the milk tea.

  • Completion

    Once the pandan jelly has set, remove it from the mold and cut it into small cubes.

    Add ice to 3/4 of a glass, pour about 100ml of milk tea into it, and optionally add 10 – 20ml of syrup.

    Then, slowly pour in 80ml of pandan juice, being careful not to pour too forcefully to create two visually appealing layers.

    Finally, add about 1 – 2 spoonfuls of jelly on top and garnish with pandan leaves, and you can invite everyone to enjoy!

    Malabar Taro Milk Tea with two layers of creamy white and deep green is incredibly eye-catching. Take a sip and you will feel the sweet and slightly bitter taste of Malabar combined perfectly with the rich and fragrant flavor of milk tea!
