1. White tapioca pearls
Preparation
10 minutes
Cooking
45 minutes
Difficulty
Medium
Ingredients for White tapioca pearls Serves 2
White sugar 250 gr (can be adjusted to taste) Soft jelly powder 4 teaspoons (jelly powder) Hard jelly powder 1 teaspoon (agar powder) Filtered water 1 liter
Distinguishing between gelatin powder and jelly powder
- Jelly powder will create a slight firmness and solidification for the product. Meanwhile, gelatin powder will create a softer, more wobbly product compared to jelly powder.
- Gelatin powder is usually used to cook with various fruit juices to create a beautiful translucent white. Jelly powder is often mixed with coffee, pandan leaves, or chocolate to add another color to the product.
Required tools
Pot, bottle or jar with a small opening to shape the pearls, stove, spoon, bowl,…
How to make white pearls
-
Boil the gelatin mixture
Heat 1 liter of gently boiling water (note do not boil vigorously), then add 1 teaspoon of jelly powder and stir well. Next, mix sugar with 4 teaspoons of gelatin powder.
Add the sugar and gelatin mixture to the pot and stir well until dissolved. Then, simmer until the mixture thickens slightly.
-
Shape the jelly balls
Then pour the jelly mixture into a clean bottle with a pointed tip (like a bottle for pho sauce that can withstand heat).
Tip: In case you do not have a heat-resistant bottle, let the mixture cool down a bit but still warm so it does not solidify. We need to do this step so that when pouring the mixture into the bottle, the bottle does not shrink.
Prepare a large bowl of ice water, then pour about 1/2 cup of cooking oil in so that the oil separates from the water.
Drop the jelly mixture into the bowl, the jelly droplets will form round balls as they pass through the layer of oil, then sink into the ice water to harden, forming the finished jelly balls.
-
Completion
You scoop the tapioca pearls out and rinse off the oil, then place the pearls in a small bowl, mix in some sugar and a little lemon juice to enhance the flavor.
-
Final Product
After completion, you can add the tapioca pearls to lemon tea or milk tea to enjoy, with a chewy and crunchy texture that surely blends well with the creamy taste of milk tea or the refreshing sourness of lemon tea, you will not be disappointed.
