How to choose good purple sweet potatoes
- Choose heavy, firm sweet potatoes that are not bruised. Additionally, opt for those with an intact appearance, without cracks or chips.
- Select medium-sized sweet potatoes, as larger ones often have more fibers and are less tasty.
- If you see sweet potatoes that are pitted or have black spots, it indicates that they are spoiled.
How to make Tapioca noodles with purple sweet potato

Boil and mash the potatoes
Wash the potatoes you bought, place a pot on the stove, turn on medium heat, add 2 liters of water to boil, add the potatoes and 1/2 tablespoon of salt, and boil for 30 minutes until the potatoes are cooked.
Next, take the potatoes out, peel them, and mash them while still hot.

Mix the flour with the potatoes
Add 330g of tapioca flour and 70g of rice flour to the potatoes, mix well while the potatoes are still hot.
Add 1 bowl of hot water (about 100ml) and mix together, knead for about 30 minutes until the dough is no longer sticky to the hands.
Note: You should gradually pour the water in while kneading to adjust the amount of flour to the right consistency; not too dry or too wet.

Shape the tapioca noodles
You roll the dough flat, then use a knife to cut it into long strands, about 1/2 finger width, or cut it according to your preference.
Tips for easy cutting without sticking- Sprinkle a little tapioca starch over the kneaded dough; the starch will help prevent the dough from sticking and make it easier to cut.
- Dust the cutting tools and surfaces that contact the dough with tapioca starch before cutting. Whenever you feel the dough sticking, sprinkle more starch on it.

Final product
If you are not eating immediately, place the tapioca noodles in a zip bag and store them in the refrigerator. When cooking, just thaw and boil for about 5 minutes to be ready to eat!
