Sprinkle a little tapioca flour on the flat surface, place the cold rice mixture on top, sprinkle a bit more tapioca flour, and use a round water bottle (or a rolling pin) to flatten the dough, aiming for a thickness of about 1/3 of a finger’s width.

Use a knife to cut the dough into squares approximately the size of 2 finger widths, or you can cut them according to your preference.

How to choose fresh ingredients

How to choose fresh green papaya

  • Select papayas with green skin, intact skin, and observe that the stem still has sap. The fruit should be of moderate size, weighing around 1kg, and feel firm when pressed.
  • Avoid buying ripe papayas for this dish as they are too soft, and unripe papayas will taste bitter.
  • Do not buy papayas that are bruised or leaking, or have withered skin, as these are old and have been stored for a long time.

How to choose fresh carrots

  • Choose carrots that are bright orange, firm, of moderate size, and feel solid in hand.
  • If the carrot is too large, with thick tops and shoulders, do not select it as these are older carrots, which will have more fibers and less nutrients.
  • If pressing it with your hand feels soft, has bruises, or the tops are wilted, absolutely do not buy it.

How to Choose Fresh, Safe Eggs

  • Observe the eggshell. Fresh chicken eggs usually have a dark brown shell, even in color, without cracks or black spots.
  • You can touch the eggshell surface; if it feels rough and slightly textured, it is a fresh chicken egg, whereas a smooth surface indicates the egg has been stored for quite some time.
  • Do not buy chicken eggs that are pale in color, have many black spots, or have an unusual smell, as these are signs of eggs that have been stored too long and are starting to spoil.
