How to choose good flattened rice

  • Good flattened rice has bright grains, looks firm, and is thin, flat, not too thick.
  • Additionally, good flattened rice has a faint characteristic aroma of young rice. When you taste it, you can feel the chewy texture, light sweetness, and natural nuttiness.
  • Moreover, you should avoid buying flattened rice that is too dark in color as this may indicate that it has been dyed.
  • Especially, if you see that the flattened rice is moldy, sticky, and emits an unusual smell, you should absolutely not buy it as it has been stored too long and should not be eaten.

How to choose good, plump mung beans

  • For making sweet soup, use peeled mung beans. When selecting peeled mung beans, choose those that are shiny, bright yellow, and of uniform size and color.
  • You can check the plumpness of the beans by pressing your finger on a bean; if it is crispy, breaks easily but doesn’t create many small crumbs, then it is good mung bean.
  • Fresh mung beans usually have a light, characteristic aroma. Avoid selecting beans that have a musty smell or any strange odors.
  • Avoid choosing beans with black spots, dull colors, or uneven sizes. Especially do not select mung beans that show signs of being eaten by pests or have many black sand-like particles.

How to make Mung Bean Sweet Soup

  • Prepare the ingredients

    First, with 200g of flattened rice, you should rinse it clean to remove any damaged or shriveled grains.

    Next, take a bowl and soak 150g of peeled mung beans and 200ml of water for 4 – 6 hours until the mung beans swell, then drain the water.

    At the same time, put 3 tablespoons of tapioca flour and 3 tablespoons of water into another bowl, and use a spoon to stir gently until the tapioca flour is dissolved.

  • Steam mung beans, mash

    After preparing the ingredients, place a steamer on the stove with 200ml of water in the bottom compartment, and evenly spread 150g of peeled mung beans that have been soaked in the top compartment, cover it and steam for 15 – 20 minutes over medium heat.

    When the mung beans are soft and cooked, turn off the stove, transfer the mung beans to a mortar, and then use a pestle to mash them.

    Tip: To save time, you can use a blender, add a little water, and blend the mung beans!

  • Mix the rice flakes and mung beans

    Then, take a bowl and add all the mashed mung beans along with 200g of flattened rice flakes, using a spoon to stir well so that the rice flakes and mung beans are evenly mixed.

  • Cooking the dessert

    After preparing the ingredients, place a pot on the stove with 1 liter of water over high heat. When the water is gently boiling, add 250g of rock sugar, then reduce to medium heat and cook for 5 minutes.

    When the sugar has dissolved, add the bowl of mixed tapioca flour, continue cooking for another 5 – 7 minutes, and when you see the dessert boiling again, season to taste and turn off the heat.

    Tip: To avoid the dessert clumping together, you should gradually add the tapioca flour while continuously using a ladle to stir until you achieve the desired consistency.

    Finally, prepare a bowl and add a bit of syrup, the cooked tapioca flour, along with the mixture of flattened sticky rice and green beans, stir well, and enjoy right away!
