Red tilapia 1 fish Beer 1.2 liters (equivalent to 4 cans) Dried wood ear mushrooms 200 gr (moc nhĩ) Enoki mushrooms 200 gr Glass noodles 100 gr Peanuts 50 gr Chili 3 pieces Shallots 3 bulbs Green onions 4 stalks Lemongrass 10 stalks Banana leaves 1 piece Fish sauce 1 tablespoon Common spices a little (salt/ seasoning powder/ pepper)

  • Prepare the red snapper

    Buy the red snapper, clean it, remove the fins, gills, and scales.

    Cut the fish in half, remove the backbone, and then wash the fish thoroughly with water.

    How to eliminate the fishy smell of red snapper

    • First, clean the fish by scaling and gutting it thoroughly. Be sure to cut away any clots of blood and the cloudy white patches in the fish’s belly.
    • Eliminate the fishy smell by rubbing coarse salt on the fish for about 10 minutes and then rinsing it with water. Additionally, you can dilute some lemon juice with a little salt in water and soak the fish for about 10 minutes, then rinse it clean.

    Enoki mushrooms are washed, soaked in water for 10 minutes, then rinsed with clean water.

    Glass noodles are cut into bite-sized pieces and soaked in water for about 10 minutes to soften.

    Green onions and chili are washed and sliced diagonally into small strips.

    Banana leaves are stripped of their leaves, and the stems are cut into pieces about the length of a handspan.

    Place the banana leaf stems and lemongrass in the pot one by one. Then add the fish to the steamer and close the lid.

    After about 15 minutes of steaming, add 4 cans of beer to the pot. Then steam for another 20 minutes to complete.
