- Choose fish that has a bright pink color. The gills should be dark pink, and the gills should be even and uniform in color.
- Avoid buying red tilapia that has a pale color. The gills should be light, without uniformity in color.
How to choose good black mushrooms (wood ear)
- It is advisable to buy black mushrooms that are dark in color. Choose those with large, thick ears.
- Avoid buying moldy wood ear mushrooms that are white, and do not choose those that are rough and black.
How to choose fresh enoki mushrooms
- You should prioritize selecting enoki mushrooms with large, thick caps and stems with few small mushrooms.
- The mushrooms should have a dark amber color, slightly shiny (for the top side of the mushroom) and a coffee milk color (for the underside).
- Avoid choosing enoki mushrooms that look too black, as these may become mushy when soaked in water and are less crispy.

How to make Beer Steamed Red Snapper
-
Prepare the red snapper
Buy the red snapper, clean it, remove the fins, gills, and scales.
Cut the fish in half, remove the backbone, and then wash the fish thoroughly with water.
How to eliminate the fishy smell of red snapper
- First, clean the fish by scaling and gutting it thoroughly. Be sure to cut away any clots of blood and the cloudy white patches in the fish’s belly.
- Eliminate the fishy smell by rubbing coarse salt on the fish for about 10 minutes and then rinsing it with water. Additionally, you can dilute some lemon juice with a little salt in water and soak the fish for about 10 minutes, then rinse it clean.
- You can also use vinegar or white wine to wash the fish, which will help effectively eliminate the fishy smell!

-
Marinate the fish
Marinate the red snapper with 2 teaspoons of salt, 1 teaspoon of pepper, 1 teaspoon of seasoning powder, and 1 tablespoon of fish sauce.
Let the fish marinate for about 15 minutes to absorb the seasonings.
-
Prepare the other ingredients
Soak the black mushrooms in clean water until soft, then wash them again with salt and slice them thinly into strips.
How to properly soak dried black mushrooms
- Absolutely do not soak in hot water as hot water will stimulate the toxins in the mushrooms causing food poisoning.
- Do not soak the mushrooms for too long (maximum soaking time is 2 – 3 hours) as the toxins in the mushrooms will increase, especially the morpholine which appears more over time.
