How to choose fresh fish
- Choose fish that swim vigorously, have clear eyes, and skin without unusual colors.
- If you notice any abnormal signs such as bloating, weak swimming, or pale color, do not buy them.
- The flesh should be firm, tightly adhering, not loose, and have high elasticity.
- Avoid buying fish with unusual colors, flesh that lacks elasticity, or has indentations when touched.

How to prepare Fried Tongue Fish with Batter

Prepare the ingredients
When buying tongue fish, if they are large, remove the head, wash them several times with water, and then let them drain.

Marinate the fish
Place the tongue fish in a bowl and add 1 tablespoon of salt to marinate for about 15 minutes for the fish to firm up. Then add 3 tablespoons of batter mix, gently stir so that the batter coats the fish evenly.

Fry the fish
Heat a pan on the stove, add 4 tablespoons of cooking oil, and turn on medium heat to heat the oil.
Next, add the marinated tongue fish coated with batter into the pan and fry on medium heat for about 3 – 5 minutes until the fish is golden, then flip to the other side and continue frying until both sides are golden and crispy, then remove and let drain.

Making tamarind fish sauce
You add 1/2 bowl (rice bowl) of hot water soaked with 2 tablespoons of sour tamarind, soak for about 2 – 3 minutes then stir the tamarind evenly and filter to get the tamarind juice and discard the residue.
Next, you add 3 tablespoons of sugar, 3 tablespoons of fish sauce, and 1/2 teaspoon of monosodium glutamate to the tamarind water and stir to dissolve the mixture.
Then, you pour the tamarind water mixture into a pot, put it on the stove and boil for about 2 – 3 minutes then turn off the heat to cool. When the tamarind water cools, you add minced garlic and minced chili and stir well to complete!
