Tofu 300 gr Ground pork 80 gr Green onion 40 gr Chives 4 stalks Garlic 2 cloves Shiitake mushrooms 2 pieces Chicken eggs 2 pieces Sesame 1 teaspoon Soy sauce 1 tablespoon Oyster sauce 1 tablespoon Chili sauce 1/2 tablespoon Tapioca flour 1/2 teaspoon Filtered water 300 ml Cooking oil 3 tablespoons Common spices a little (Sugar/ salt/ ground pepper)

  • Choose tofu that is off-white; if it has a yellowish color, it may contain gypsum and should not be selected.
  • Buy pieces of tofu that feel light and soft. If they feel heavy, firm, or a bit hard, and are too square, they should be avoided.
  • Real, pure tofu has a distinctive aroma, while tofu containing gypsum either has no smell or a faint lime scent.

How to choose good quality eggs

  • It is advisable to choose eggs with a sturdy, shiny, and visually appealing outer shell, and there should be no rough patches or tiny holes on the surface.
  • You can also gently shake the egg to check; if you hear the sound of liquid sloshing inside, do not buy it as it indicates that the egg is spoiled.
  • Avoid purchasing eggs with dark, heavily cracked shells, as these eggs have been stored too long and are no longer usable.

  • Prepare the ingredients

    Cut the tofu into small square pieces. Clean the shiitake mushrooms, remove the stems, and slice them thinly.

    Wash the scallions and green onions, then chop them finely. Peel the garlic and mince it.

    Prepare a bowl to mix in 1/2 tablespoon of cornstarch and 150ml of water, stirring well to dissolve the starch.

  • Make the sauce

    Prepare a bowl with 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, 1/2 tablespoon of chili sauce, 1 teaspoon of sugar, 1/3 teaspoon of ground pepper, and 150ml of filtered water, then stir well to complete the sauce.

  • Fry the tofu

    Place a pan on the stove, add 2 tablespoons of cooking oil to the pan, wait for the oil to heat up, then add the tofu and fry until golden brown on both sides for about 2 minutes, then take it out.

  • Fry the eggs

    Using the same pan where you fried the tofu, add 1 tablespoon of cooking oil, then add 2 beaten eggs, fry briefly so that the eggs separate into pieces, then transfer to a plate.

    Prepare a pan, add 40g of scallions and sauté briefly until fragrant, then add 80g of minced pork, stir well, add 2 cloves of minced garlic, and stir-fry for about 5 minutes until the meat turns golden brown over medium heat.

    Next, add the fried tofu, followed by 2 sliced shiitake mushrooms and the prepared sauce.

    Then, bring to a boil for about 5 minutes until the sauce thickens, add the diluted starch water and cook for an additional 2 minutes, stirring well. After that, add 4 chopped green onions and 1 teaspoon of sesame seeds, then turn off the heat.

  • Final product

    The tofu is soft and delicious, the shiitake mushrooms are sweet and chewy, well absorbed with seasoning, the eggs are rich and fragrant while still retaining their freshness and tenderness without being dry, along with the aroma of sesame and green onions making the dish more appealing.

    You can enjoy stir-fried tofu with eggs along with white rice, which is also very delicious.
