  • Prepare the ingredients

    Tofu is washed clean, then blanched in boiling water for about 1 – 2 minutes, then removed and drained, and then use a knife to cut into thin, bite-sized pieces.

    Shallots, garlic, and ginger are peeled, washed, and minced finely. Chili peppers are de-stemmed, and green onions are trimmed of roots and yellow leaves, then chopped small.

  • Fry the tofu

    Place a pan on the stove, add 3 tablespoons of cooking oil into the pan, and turn on medium heat. When the oil is hot, add the cut tofu pieces and fry until they are golden brown on all sides.

    Remove the fried tofu to a plate and let it drain excess oil.

  • Make the sauce

    Mix the sauce ingredients into a bowl including 1 tablespoon of soy sauce, 1/2 portion of minced garlic, shallots, and ginger. Next, add chopped chili, chopped green onions, 1 tablespoon of monosodium glutamate, 1 teaspoon of vegetarian oyster sauce, and 1 teaspoon of vinegar.

    Use a spoon to stir well until the ingredients are dissolved and blended together.

    Reuse the frying oil from the tofu, add the remaining 1/2 of minced ginger, garlic, and shallots into the pan and sauté over medium heat. Then add the mixed soy sauce into the pan, lower the heat, and stir well to simmer.

    Mix 1 teaspoon of tapioca flour with 2 teaspoons of water and stir well.
