How to Make Black Sesame Porridge

  • Roast and Grind the Black Sesame

    After purchasing the black sesame, measure about 70gr and place it on a pan to roast for about 2 minutes until fragrant. Be sure to stir evenly to prevent burning.

    Once roasted, put the sesame in the blender, add 960ml of water, and blend until completely smooth, then pour through a strainer. Filter to extract the juice.

  • Grind the rice

    Measure about 140 grams of rice, rinse it clean, and soak it in water for about 1 hour to allow the rice to soften.

    Then put the rice into the grinder, add 480ml of water, and grind until smooth.

  • Cook the porridge

    Add the mixture of ground rice and black sesame along with 960ml of water into a pot. Cook on low heat until the porridge boils.

    When the porridge starts boiling, add 1 teaspoon of salt to the pot, and continue cooking for about 1 – 2 minutes until it reaches the desired thickness.

    Make sure to stir gently and consistently while cooking to prevent the porridge from sticking to the bottom of the pot and to achieve the desired consistency.

  • Choose those with bright colors, dark orange, smooth skin, still firm, and not too large in size.
  • The smaller the core in the middle of the carrot, the sweeter the carrot will be.
  • Avoid choosing carrots with leaves or branches at the root, and those with thick, large shoulders, as these are usually carrots with large cores, not sweet and low in nutrients.
  • Do not buy carrots that are bruised, misshapen, or have wilted, rotten leaves.

How to choose delicious and safe black beans

  • Choose black beans with green hearts, thin skin, beautiful shiny black color, and evenly round seeds. Additionally, good black beans will have a distinctive aroma.
  • You can test by squeezing the bean hard; if the bean remains unchanged, it is good. If it makes a noise when squeezed, it is definitely hollow inside, and you should not choose that type of bean.
  • Avoid buying beans that are shriveled, have a musty smell, or pale color as these are signs that the beans have been stored for too long and are about to go moldy.

How to prepare Black Bean Porridge

  • Prepare the ingredients

    Measure about 2 cups (480g) of brown rice, wash it to remove dirt. Clean the carrots, peel, and dice them.

    Soak the peanuts in warm water for about 3 hours until they soften. Clean the black beans and soak them in water for about 1 hour until soft.

  • Cook porridge

    Add the soaked peanuts into a pot with 2 liters of water and simmer for about 1 hour on high heat until the peanuts are soft.

    After about 1 hour, add the black beans and continue to cook for another hour.

    Next, add brown rice, 240g of carrots, and 2 tablespoons of olive oil into the pot. Cover and cook on high heat for another hour.

    Finally, add about 1/3 teaspoon of salt into the pot, stir well, turn off the heat, and scoop into a bowl.
