  • Choose ribs that are flat and small, with a lot of cartilage; this type has more meat and tastes better than larger, round ribs.
  • Avoid buying pork ribs that have an unusual odor, dull-colored meat, or are slimy.

How to prepare Kimchi Soup with Pork Ribs

  • Prepare the pork ribs

    Wash the pork ribs several times with water, then cut them into bite-sized pieces. To remove the unpleasant odor, soak the ribs in a basin of diluted salt water for about 10 minutes, then take them out, wash them clean again, and let them drain.

    • Method 1: Boil a pot of water and blanch the pork ribs for about 3 – 5 minutes, then take them out and rinse under running water to remove all the dirt sticking to the ribs.
    • Method 2: Soak the pork ribs in diluted white wine for about 10 minutes, then rinse with water.
    • Method 3: Another way to eliminate the unpleasant smell from pork ribs is to mix a little vinegar into the rice washing water and then soak the ribs for about 10 minutes, afterward take them out, wash them clean, and let them drain.

  • Cook the Kimchi Soup with Pork Ribs

    Place a pot on the stove, add the pork ribs along with about 1 liter of filtered water and 1 teaspoon of salt, turn on high heat and cook until the water boils, then lower the heat and simmer for about 15 more minutes.

    Note: To keep the soup clear, during the cooking process, regularly skim off the foam that rises to the surface.

    Next, add the fish balls and kimchi, season with 2 tablespoons of fish sauce, 1 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, 1 tablespoon of sugar, and stir well.

    Cook for another 5 – 10 minutes until the fish balls are cooked, then taste again to adjust the seasoning, boil for another 5 minutes, and then turn off the stove.

    Serve the soup in a bowl, sprinkle with a little ground pepper, and enjoy while it’s still hot!
