Prepare the ingredients
After purchasing, chop the pork ribs into bite-sized pieces.
Place a pot of water on the stove and bring it to a boil. When the water is boiling, briefly blanch the ribs for about 1 minute to clean off dirt and eliminate any unpleasant odors, then remove the ribs and rinse them with cold water and let them drain.
Peel and finely chop the shallots and garlic.
Cut the green onions into small pieces.
-
Marinate and fry the ribs
Marinate the ribs with 1/4 tablespoon of MSG, 1/4 tablespoon of chili powder, 1/4 tablespoon of pepper, 1 tablespoon of fish sauce, 1/2 tablespoon of honey, and half of the chopped shallots and garlic. Mix well and let the ribs marinate for about 25 – 30 minutes for the flavors to penetrate.
Heat a pan on the stove, add 50ml of cooking oil. When the oil is hot, add the marinated ribs and fry on medium heat until the ribs are cooked and golden brown on both sides, then remove them and let them drain.
-
Prepare the seasoning sauce for the ribs
Add 1 tablespoon of fish sauce, 1/4 tablespoon of monosodium glutamate, 1/4 tablespoon of chili powder, 1/4 tablespoon of pepper, 4 tablespoons of honey, 1 tablespoon of oyster sauce, 1 tablespoon of annatto oil into a bowl, then stir well until the ingredients are completely dissolved.
-
Glaze the ribs
Place a pan on the stove, add 1 tablespoon of cooking oil and wait for it to heat up, then add all the remaining minced onion and garlic to sauté until fragrant.
Once the onion and garlic are golden and aromatic, pour the seasoning sauce mixture into the pan and bring to a boil.
Next, add the fried ribs into the pan, lower the heat, and glaze the ribs for about 5 minutes to let them absorb the seasoning evenly.
Dissolve 1 tablespoon of tapioca starch in 20ml of water, stirring well until the starch is completely dissolved.
Finally, slowly pour the prepared tapioca starch mixture into the pan, stir for about 1 more minute, then turn off the heat.
Tip: If you don’t have tapioca starch, you can use cornstarch instead.
Arrange the ribs on a plate, decorate them nicely, and it’s done.

Prepare the ingredients
After purchasing the pork ribs, use salt or lemon to rub the meat surface, then rinse thoroughly with water, drain and cut the ribs into bite-sized pieces.
After cleaning, place the ribs in a bowl and pour boiling water over them until submerged, blanch the ribs for about 5 – 10 minutes then remove, rinse thoroughly and drain.
Tip: It is advisable to wash the ribs thoroughly before blanching to avoid dirt sticking to the ribs, making them difficult to clean.
-
Make the sauce for braised ribs
In a bowl, add 1.5 tablespoons of chili sauce, 1.5 tablespoons of ketchup, 4 teaspoons of soy sauce, 1.5 teaspoons of sugar, 2 teaspoons of vinegar, 1/3 teaspoon of monosodium glutamate, then stir well until all the ingredients dissolve completely.
-
Marinate and fry the ribs
Marinate the ribs with 1/3 teaspoon of salt, 2 teaspoons of seasoning powder, 1/3 teaspoon of monosodium glutamate, 1 teaspoon of soy sauce, 1 tablespoon of sugar, 1/3 teaspoon of ground pepper, 5g minced garlic, and 10g minced shallots. Mix well and let the ribs marinate for about 15 – 20 minutes to absorb the spices evenly.
Crack 1 egg, separate the egg white, then mix it with 2 tablespoons of cornstarch.
Add the cornstarch and egg white mixture to the bowl of ribs, mixing well to coat the ribs evenly.
Tip: Marinating the meat with egg white and cornstarch helps the ribs become golden and crispy when fried.
Heat a pan on the stove, add cooking oil and wait for it to heat up, then add the ribs to fry over medium heat until they are golden and crispy, then remove and let them drain.
-
Braising Ribs
After removing the ribs from the pan, pour out some of the oil, leaving a little, then add garlic and sauté until fragrant.
Next, add 10 grams of minced chili pepper and all of the previously mixed sauce into the pan, then add 50ml of water into the sauce bowl, mix well, and pour it into the pan. Proceed to cook until the sauce mixture boils and thickens slightly.
Braise the ribs on low heat for about 5 minutes until the sauce thickens to a syrupy consistency and the ribs are evenly infused with the seasoning, then turn off the heat.
Plate the ribs and garnish them attractively to finish.
-
Final Product
The sweet and sour braised ribs dish is easy to make, using simple and readily available ingredients, yet the flavor is incredibly delicious and appealing, making it very appetizing with each piece of rib being rich, infused with seasoning, and the sweet and sour sauce stimulating the taste buds.
How to choose delicious spare ribs
- Fresh spare ribs have a light pink color, are elastic when pressed, and do not have a rancid smell.
- Choose ribs with small and flat bones. This type of rib has more meat and less bone compared to large, round ribs.
- For soup dishes, you should choose ribs with both lean meat and fat so that when eaten, they will be softer, more fragrant, and richer.
- Avoid ribs that have a foul smell, greenish meat, are slimy, and lack elasticity when pressed with your hand.
How to clean pork so that it is not smelly
- You can use white wine, ginger, salt, lemon, or vinegar, then rub it on the meat and let it sit for about 5 – 10 minutes before rinsing it clean with water.
- Additionally, while marinating the meat, roasting a shallot, peeling it, mashing it, and marinating it with the meat will help effectively eliminate unpleasant odors.
